This is the best Leche Flan I have ever made. It is RICH, CREAMY, SMOOTH and SILKY that melts in your mouth. I took the extra step of boiling the condensed milk for 1 1/2 hours to turn into a dulce de leche. The result will give you a foodgasm.
Start with the classic cooking techniques but feel free to stay out of the box to create your own and make a difference.
Recipe, yield 6-8 servings
6 Tbsp granulated sugar
4 Tbsp water
1 can (14oz) dulce de leche
1 can (12oz) evaporated milk
2 each whole eggs
8 each egg yolks
1/4 cup granulated sugar
2 tsp vanilla extract
about 1/4 lime zest
1/4 tsp salt

Note: High temperature would result to porous custard. Make sure that your oven is calibrated. This dessert is baked in a still oven and NOT in a convection (with fan)

The hub and I absolutely thought this was fantastic! So many forget to let people know the cooking duration, temp, and the method with which the recipe is cooked ( via stove top bain marie vs oven bain marie as well as type of oven (convection vs non convection). Bravo! Thank you for putting that tidbit out there because it does make a heck of a difference. God Bless!

Ang galing mo naman po, what is the rationale behind the condensed milk that needs to Be boiled first before adding to the mixture? Is it Because it makes the flan more stable? I just want to. Know, i am Amazed

It's really good. I was surprised myself. I had to make about 5 of these with trials and errors before i came up with this. The recipe and some notes are on the description. Make it with love and care and you can never go wrong! Have fun and be safe! :)

This is the best leche flan you will ever have! I promise. :) This dulce de leche comes from my years of experience as a chef! I do not think filipinos do the extra step to make the dulce de leche. Kawaling pinoy channel made it 3 days after i posted it, making a version of it too :)

How many eggyolks if im using small eggs,would that be 12?,ang regarding making dulce de leche,can i use a pressure cooker to shorten the cooking time.

Hello. Slow steaming is what makes it creamy and smooth. Pressuring it would create holes with too much heat. You may google the weight of the large eggyolk and small eggyolk and convert accordingly.

Hello! It is 6inch by 3inches! And it also thicker. Otherwise, i would not caramelize the sugar in there.

You may also use an 8 inch pan but the flan would be thinner. And that would change the time of baking it as well.
