I don't know what chestnus taste like but mostly here in Philippines we use Garlic, Purple Onion, tomato, Jicama, Carrot, Vegetable Pear or pear squash or potato (which is optional) and pork. With a little bit of Pepper and Salt. You should try this. Trust me it's superb 🤗🤞👌

Cooking the filling before wrapping it is actually a good idea. It lessens the frying time with the wrapper. I have no idea what water chestnuts tastes like, but it looks good and I approve it. Usually I add a ton of onion in my pork mix, some carrots, and finely as in finely diced raisins (it makes the difference). Also if you happen to have chinese parsley (kinchay) add those also, or just celery. Then put an egg or two to bind it all together. That's my version HAHA. Your lumpia wrapper is amazing, i never tried something like that. It has no holes so it's easier to wrap the filling HAHA. Also good job on using sweey chili sauce as the dipping. Looks yum!

that's a common lumpia wrapper overseas. you can also find that at grocery stores in the philippines. that's not the usual cheap lumpia wrapper that you buy at the market.

My fave food. That lumpia is called lumpia Shanghai. Then there is fresh lumpia (egg roll) and lumpiang ubud (not sure what ubud is though). Traditionally, the dipping sauce is vinegar w garlic and optional chilli or a sweet red sauce but no chilli (similar to sweet and sour sauce). The dipping sauce for the other lumpias though is sweet garlicky gravy.

@@JMacsAmateurKitchen Now for your next challenge. Cook lumpia 'ubud or ubod' . The key to Filipino dishes is that they are almost always paired w a particular dipping sauce. Crispy pata with soy, vinegar and garlic sauce, Kare-kare w bagoong, etc. Pls dont use sweet chili, it's not Filipino. Instead, find banana ketchup.

nailed it again but you did the cooked version lumpiang shanghai.. the downside of that when you start wrapping, it gets wet all over.. the other version is the raw mince pork version where u put all the ingredients together with veggies then wrap it thinly as possible.

In our place we don't cook the filling we wrap it raw.then we fry.we use red onions, garlic and carrots pepper and our sauce is spicy

You wrapped them pretty wide/fat. I prefer them much thinner. Also, if they’re thinner, you can use raw ground pork. That way, you can freeze them ahead of time (or just make extra).

Iref mo man di magiging dry ang karne nya pag ipi-prito mo na... At walang soy sauce ang lumpiang shanghai, at mataba talaga yung pagkakarolyo nya... Tutal luto naman na dati yung ilalagay nya sa wrapper kaya kahit lakihan nya ok lang dahil yung wrapper nalang naman ang iluluto...

The wrapper needs to be cooked thoroughly, or it will be gummy, instead of crispy. They are good at room temperature...never had a cold one.

@@JMacsAmateurKitchen You could do a silog - a portmanteau of *sinangag*, which is garlic fried rice, and *itlog*, egg (usually served sunny side up/over easy). Plus whatever meat that accompanies it e.g. spam with garlic fried rice and egg would be called spamsilog. As for the kind of silog, I recommend the classic tapsilog - made out of tapa, a type of salt cured meat usually made out of beef or carabeef but venison, mutton and horse could also be used, Filipino breakfast jerky if you will. And there's the essential condiments of spiced vinegar and/or atchara (sweet pickled unripe papaya). Love your vids btw :)

Lumpia has a vegetarian version. But it's even oily than the meaty one. You can dip either sweet chili sauce or spicy vinegar.

I usually do this without the sauteing part. Fresh meat mix -> roll then fry What I do is copied the chinese style of separating the fat from the lean. Mixing the lean first with the spices + onion(white) and carrots until sticky (hand massage + slamming) then add the fat later + egg + the fresh chives or onion leaks chopped fine or my favorite Kinchay (chinese celery). And know your kinchay, people fall for using Wansoy(cilantro / coriander). instead of Kinchay. Google that shit if you're not sure. Wansoy has a stonger flavor w/c I personally don't like. So my version , lean pork preferably leg part or butt, minced really fine not ground.(ground is fine if you don't want to bother) Onion, carrots, white or black pepper (your choice), a little oyster sauce, sugar, chicken powder, flour, egg. And I use wanton wrappers cause I like em crispy. Served with sweet chili sauce or if you have a lot of time a sweet and sour dipping sauce. And yeah my version would look more like a deep fried siomai.

@@JMacsAmateurKitchen here are the tips: saute the garlic in a cooking oil until golden brown, then add the onion, saute them together for a minute and add the meat and season it. when the meat is cooked, add the veggies like your carrot and water chestnut. leave it for about 2 minutes. that way, you don't overcook the veggies because you will fry them after wrapping. i hope this helps.

Lumpia is actually a Chinese delicacy, hence the name "Lumpiang Shanghai." Pancit (bihon, canton, miki, sotanghon), siopao, siomai are all from the Chinese. A lot of our culture are Chinese-influenced. As early as 900AD, they have been trading goods to our country.

Cooking the filling before hand is not a good idea. That is also not the traditional way of cooking it. The filling tends to be crumbly, as compared to using raw meat, it gets more packed and almost feels like a crunchy sausage

Wrong and stupid recipe. We dont cook the meat before putting inside the wrapper we always put it raw inside the wrapper with all the condiments it will just cook while frying so its stupid that you cooked the meat first
