Kid G is based on the Goblin enemies from the original, but is a Rebirth original character. Kyrie is the female protagonist of the novel FF7: The Kids Are Alright, so she is not a new character, but it is new that she exists in the main story of FF7.

Wait, wasn't Kid G a reference to that ugly toy in the same sewer as that Test 0 enemy? I ironically learned of that from a KZbin channel you used to work at so not sure if I'm wrong or if Kyle just doesn't know about it/forgot. Also I think Kyrie came from the compilation not the remakes but could be wrong on that one. I just remember people correcting me on Leslie and Kyrie being characters prior to remake existing.

The things is, in the space of the last decade the system that championed indie games, independent outlets and such, has been completely obliterated as we got to our current influencer-based, engagement-bait, get-them-in-the-first-10-seconds media landscape. That means that indies themselves have to act in aggressive market-focused ways in order to grab the little attention they can get. So of course this affects game designs, with trends calcifying (procedural roguelikes, deckbuilders, crraft'em ups, wholesome games) as to make games more friendly to recommendation algorithms, as the space for risky proposals plummets. Hell, some of the current successes openly used mobile-esque dark patterns to grab players (Vampire Survivors is the most visible example). The triple I moniker makes absolute sense in the ways those studios are using the same marketing tactics of triple A in a lesser budget scale in order to stay afloat.
