I bought a 50 pound bag of potatoes in June. I put them in a cardboard box in my basement to store. I grabbed some for dinner last night. So what I do is go ahead and make my mashed potatoes, line a cookie sheet with parchment paper and scoop out mashed potatoes. Put pans in the refrigerator for about an hour, then put then in freezer bags. Then when I need mashed potatoes I can take out as many as I need for that meal. Makes it so convenient and they taste fresh made. Just a tip if you need to use up potatoes but still have them in the freezer ready to go.

Really enjoying your videos in Canada! Looking forward to your housekeeping tips & meals as well. One question: If you aren't going out on a regular basis, how do you keep a supply of fresh veggies & greens for salads, etc? In northern climates we don't have the option of growing them 3 seasons. Wondering if there are any ideas besides what we do---We keep lettuce or spinach in large containers in the fridge, making sure it's well-dried & loosely placed, with a dry paper towel on the bottom & on top. When the paper towel gets damp we replace it; this seems to keep the leafy greens the longest. Going to try the living lettuce that has a little root ball in water next trip. For celery & cucumbers, we remove from the plastic packaging, then wrap in paper towels & store loosely in large open plastic bags in the crisper. Tomatoes we keep in a dark cool dry place not touching each other, same as potatoes.

You two are so cute and supportive of one another 😊 Just curious what you will do for fruits and veggies during your lock-in? Will you just eat your canned items? If you ever need teriyaki sauce, you can easily make it with some staples. It’s basically soy sauce, vinegar, sugar, a little bit of ginger (I try to keep jarred minced ginger on hand because I can’t use fresh ginger fast enough), garlic and a bit of corn starch/water. Simmer on the stove until it thickens.

Tartar sauce = mayo and pickle relish. So you can eliminate tartar sauce! 🥳. If you are new to gardening and want to save your backs, look into No Dig. Get you a ton of cardboard, (free behind shopping malls!!!) wet it. Layer with all those grass clippings (unfertilized:or treated) and shredded leaves. You can even get some from you neighbors. Compost all your veggie scraps and layer that on top. If you have compost now, layer it in with the leaves and grass clippings. This is an awesome hunker down project. Once this is done water it. The let nature do the rest!!! I’m in my 60’s and created a 50 x 50 garden this way. Keep layering and before you know it you will have awesome soil. Tree crews will drop off the wood chips for free, let them age at least 6-9 mos. 9-12 is better. You can add cow and horse manure to the layers too if you have a source but be careful about the horse manure because sometimes the grass they eat is treated with herbicides which will kill seedlings and plants! Best of luck to you and thanks for sharing your journey. Congratulations!!!!!

Glad you are planning to continue the channel. I am starting to can as well so I would love to see videos on that. It seems like you are a great cook so recipes and videos about how you keep your home are something I am looking forward to. Keep up the good work and God bless.
