I’ve been on Keto (seems like forever) but have had a difficult time losing weight but since switching out a few days of the week to do protein sparing, I started losing weight pretty regularly. I am loving this!
@mylifewithfive3 жыл бұрын
I have made this bread and I agree, it is spongy but after trying a lot of other "breads" it seems closest to real bread and it is all protein. It holds up to a sandwich. You can also make it into buns, baguettes, hot dog buns, etc. Oh and the pudding... it is made from hard boiled eggs. Haven't been brave enough to try it yet. Thanks for being so open to trying new things and sharing them with us.

I don't even understand why that pudding requires cooked egg whites. There are egg puddings where the egg gets cooked with the flavorings.
@Ladyfirst223 жыл бұрын
I love that you guys tried the bread!! :)) If I may offer a couple of insights I have gleaned from making it weekly. Firstly, it helps to add the dry ingredients (salt, cream of tartar, allulose) to the whites just as they become frothy - adding the egg white powder at the end was spot on. Lastly, I always add 1 tsp. of nutritional yeast at the beginning with the other dry ingredients because I feel it gives it more of a normal white bread taste. (You could also add a 1/2 tsp. of active dry yeast, it won't affect the rise but it would add just another layer of flavor to the bread.) And, YES, you could add seasonings and make it an Italian-style bread - finishing it off with some parmesan cheese on top! Go for it!! ;)

I've known about this bread for months but intimidated to make it. Finally, yes. LOVE it. Had a few 'fails' but it still tasted good. This past weekend I made 3 batches at my daughter's house, her hubby loved it and told us to buy 50# of the egg white powder to get the best bulk price, going to split it 3 ways. Don't know why but one of the batches beat up fast but then lost all stiffness, I could actually pour it in the loaf pan, what else what I was going to do with it, LOL. It raised SO high, tasted great except for about 1/2 inch at the bottom that looked and tasted like hard boiled egg white, just cut off that part. The 50# arrived yesterday. But hey, 1 slice is 13g protein! no fat, and great for sandwiches. Sprinkle 'everything bagel' on top, yummy saltiness and flavor

I love her bread but I do it a little differently. I love cheese and seasonings so I make an Italian seasoned, garlic cheesy bread. I use 180g egg whites, half cup egg white protein powder, .25 tsp cream of tartar, 1 tsp Italian seasoning, 1 teaspoon garlic powder, 1 tbsp nutritional yeast, .25 tsp xanthan gum, 2 tbsp allulose, pinch of salt. Its whipped the same what the protein bread is, whip whites a minute then add cream of tartar, whip about 7 minutes until very stiff. Then fold in remaining dry ingredients. I use a cookie sheet and sil pat and make sub rolls out of my fluff. I then use shredded Mexican cheese blend and I put about a tablespoon on top of each. Bake at 325 for about 18 minutes and it will change your world! Trust me the Italian seasoning, nutrition yeast and garlic add so much flavor. If I can attach a photo I will if not message me and I'll email you what they look like. I LOVE them!

@@ketotwins wow that was fast! I just emailed you the full recipe, nutritional info and pictures. Basically I take my fluff and shape it into sub rolls on a silpat and bake them free form. I also let them cool in the oven for about 20 minutes before removing them. That helps them to not fall. Yummy stuff and the cheese on the top is fantastic and crispy....I heat them back up in the oven for meal.time with a little more cheese and they are scrumptious! I hope you try them. A world of difference from the original...maria is the bomb for coming up with the original but a little extra ingredients go a long way to making them delicious.

How does your version with the yeast compare? I like adding nutritional yeast for a better flavor.
@Ev-vh3pf3 жыл бұрын
@@AnneSD Well, nutrional yeast will add a "cheesy" flavor, which is great, I've used that too. Regular bloomed yeast adds that very bready flavor, of traditional bread. It's worth it.

In order to make this bread palatable you can use it with sauces, like a "biscuit" for your sausage gravy, because it absorbs sauces well and develops a pleasant, soggy, bread kind of vibe that is actually good. Otherwise this bread is way too dry and the texture is annoying. I found that thin sliced meat with generous mayo also works, but you need moisture in your toppings. Another improvement is to put 2-3 egg yolks back into the beaten white batter and couple tablespoons of almond flour, which improves the texture, although it adds a few carbs per loaf, which I don't find is excessive. If you add the almond flour and yolks, your bread won't sink in at the sides, either. Love the dry humor ladies!

Ditto on Ketogenic Woman. She adds nutritional yeast and some Allulose. Improves texture, browning, and stability. Diet Doctor has a similar one " Cloud Bread" that also has some cream cheese and psyllium. Going to try that and see if it has a bit more structure. Instead of using it only as zero fat....think of it as low fat bread that allows you to add more fatty stuff on top of it and still stay within your macros. Ketogenic Woman did a dynamite bread pudding with it (called it French Toast Casserole). Looked amazing.

Glad to see you tried the bread. I'm not doing the PSMF but I've made this bread several times. I especially like the cinnamon muffins. Any way I changed the bread recipe to 1/3 cup almond flour only 1/3 cup of egg white powder. 1/2 tsp of nutritional yeast, psyllium husk whole, everything thing else the same. I suggest you go to Ketogenic Woman's site, and Indigo Nilli sites. I over whipped my first bread and got the texture you did. But after changing the recipe it has the texture of sourdough bread. Good luck.

From what I've read and heard Maria say the PSMF isn't something to do on a daily basis, but more like a few days a week, and it's great to use if your weight loss is stalled. I don't personally use the PSMF. The bread looks interesting but not enough for me as a lazy cook to try it. I don't do recipes if it's more than a piece of meat and some veggies it's a no for me.

I've been doing some PSMF the last couple of months and I definitely think it helps! I make the PSMF bread all the time and do lots of variations! My favorite right now is the regular recipe but then adding in a tablespoon of apple pie spice. It tastes like fall!

Make the pudding! Yes, you use boiled eggs (cool for 30 min in ice bath after boiling). Yes, it sounds awful. However, it’s actually delicious! Seriously. We LOVE it. I make it using liquid allulose (I use a bit more than suggested because it’s less sweet than other options). Blend until ultra smooth and let it chill overnight.

It is so good with garlic butter on it and toasted in the air fryer. Love to use as the bread for grilled cheese and Canadian bacon sandwiches. Yumo! I've made her lemon curd for her baby cake. So good! It's the only bread I use, doing PSMF or not. Try making the lemon curd, seems complicated but it's not.

omg! This bread is amazing and not that hard to make and doesn't take that long. Add in 3 TB of dried whole egg powder after mixing egg whites and it is like real bread! Plus the sides won't droop.This is the best bread I have seen yet, I have made grilled cheese, french toast, you can use it to make rolls and meat loaf, not just for PSMF.

Ok I finally made this bread. mine was actually soft and yummy. Only the end piece tasted like Styrofoam. Maria days the styrofoam texture happens if you whip too much after adding the protein powder. if you two feel keen on revisiting this recipe, try whipping the eggs with the allulose first, which adds to the structure. Then add the protein powder last, and only whip just enough to combine after that. I cooked mine at 315 for 30 minutes and then turned off the oven and left it in for 15 more minutes. I was shocked it's actually good and not horrifying. I'm making her protein sparing sweet orange rolls right now 😅😅
@maggiemay973 жыл бұрын
The bread is not exciting on its own, but when you make a real sandwich with it is when you really will see it’s value. I didn’t notice you turning off the oven and letting the bread just cool in it for about 15 minutes which yours supposed to do to keep it from falling if you take it right out of the oven when the baking time is over.
@krazykiwi033 жыл бұрын
Totally agree about needing to make a sandwich with it to really appreciate it. Even my toddlers who rat traditional bread will eat a sandwich with this bread without blinking an eye. And they can be picky.

@@ketotwins the order does make a difference. The longer you whip the egg white powder, the bread becomes more sponge like and more prone to collapsing on the bottom and sides .

We were not impressed with Maria's original recipe ( texture and too much egg white powder and allulose). Have watched several other channels do variations to it, and I think I have found the best combo for our liking. Some great channels that do varieties: Loving It On Keto, Ketogenic Woman, Indigo Nili and JanetGreta. I have settled on the ratio of 1/3 C egg white powder to each 1 C liquid egg whites...saves $ by not using so much powder AND the texture is not so strofoam-like.
@karend.92183 жыл бұрын
Agreed. I also tried a Keto Rewind recipe that had whey protein powder in it b/c I find it hard and $$$ to get egg protein pdr. It was also better texture and flavour. I think it had some flax in it and psyllium husk with xanthan gum. Texture and flavour is way better.

@@hollyhock3945 Absolutely & yes & same here. Somehow I'm feeling quite validated about now ~ Nice =) Can't help but wonder how many of us are that similar in our final favorite tweaks...not that I'm done mind you. Next will be a few drops of some various extracts to see how that goes~ some bakery sweet roll emulsion for a pecan-nut sticky bun version, & maybe a rye or butter extract w/some seeds & such for texture? It truly is a blank slate. *Advising a half recipe is really helpful of you~ especially because people may be hesitant to deviate since some recipes are not so forgiving- this one sure is. ;)
