Here's a little tip for everyone. I've been making chaffles for several months now, and I find if you just take the ingredients, and throw it all in a blender, it comes out much more consistent across the entire chaffle. You don't get those little clumps of egg where there's no cheese, or patches of mostly cheese. Plus, because you're blending it all together, which makes the cheese pretty fine, the batter comes out thicker, and much easier to work with. It also eliminates the problem where when you pour the first bit of batter into the waffle maker, you get mostly egg at first. With this method, the batter is consistent all throughout. A bullet style blender works best, because you are usually making small batches, but any blender will work. No matter what type of chaffle you're making, give it a try some time, and I think you'll agree it makes a better chaffle. On a side note, if you're not making a chaffle that's cheese based, then the blender method probably wouldn't make much difference, but with the cheese based chaffles, it definitely does.

When I want a REALLY smooth batter that uses mozzarella, I make it in a little Cuisinart food processor. I first pulse the dry ingredients and the mozzarella until it's like breadcrumbs, then I process in the egg and any other wet ingredients until the batter is more or less smooth. If you watch any of my videos with the corn dog maker, you'll see it in action. That said, the blender or NutriBullet also works very well. Thanks for the comment.

@ainashburn3 жыл бұрын
I just attempted this today. Here’s my thoughts.. Taste wise: - It definitely does NOT taste eggy as there’s no yolks - Garlic salt makes it very flavourful, but i used too much and turn out saltier than it ought to be. Might consider with using just garlic powder. - Overall more flavourful than typical white bread. Texture wise: - Definitely similar to a very thick omelette, but without the eggy taste. - Very pliable, like a softened waffle - Very light and moist I’ll rate 4/5 ⭐️⭐️⭐️⭐️ I have not found a good bread substitute on keto. Even eating cloud bread for a long time makes me sick of it sometimes. This chaffle recipe definitely will be my new keto “bread” for my burgers

After about 2 weeks of binging your videos, my husband and I bit the bullet and bought a couple of the Dash mini-waffle irons. Tried the egg white/cream cheese chaffle recipe tonight and it is ABSOLUTELY PERFECT! We are 51 and 52 - married for 28 years and trying to shed some weight and solidify a more active/healthy lifestyle. Matt is already down about 35# doing Keto Lite [or what you call "Dirty Keto"] in just 6 weeks. Your recipes are a game changer for me. The only advice I have to give someone trying this recipe for the first time is Be Sure To Lightly Spray your mini-waffle iron BEFORE cooking. We have a giant commercial Kitchen Aid that we've never had to spray, but this needs a little spritz, in my opinion. Thanks Keto Steve! We take waffles seriously in our house kzbin.infoUgkxUfphIgghPSpAXNq6OG2WRYsFVqylcqMn and worked our old one through many years of Sunday brunches till it finally gave out on us. Our old one only made two at a time, this one makes four! Nicely sized 1 inch thick which are lovely! Now the kids don't have to wait as long to eat our weekly waffle breakfast and everyone's are hot if we wait and eat all together! Setting 3 seems to work perfect for golden brown. Be sure to pour the batter in the center of each waffle square, not the center of the iron like the novice that posted the scorched waffles photo. About a 1/4 to 1/3 cup of batter in each seemed to work well for us. We tested making just one at a time so we could use all the remaining batter and it made it just as fluffy and golden as when we made 4!

WOW. I just made these. Put a 1/4 cup of batter into the waffle maker to make a balanced batch each time. I also used my plunger-whisk each time I scooped a 1/4 cup. My method made 3 Chaffle's and my sister and I loved them. I put 2 of them into my toaster at level one and made them perfect crisp. The best part was putting 1/4 lb. grilled beef patty topped with crisp lettuce, ripe tomatoes, purple onions, tangy pickles, and bold yellow mustard. OH YEAH, IT WAS GOOD AS IT READS!

I found a keto pancake recipe that I've altered so that it's more durable for a waffle maker (after experimentation). You can probably omit the vanilla extract and sweetener and make it more savory for other things. The closest to the original recipe I found was healthyrecipesblogs, but my alterations deviate from the recipe quite a bit. (Makes about 15-18 waffles/pancakes) Wet (mostly) ingredients: 4 eggs (I've found medium eggs are cheaper and yield a slightly thicker batter, large eggs yield a more liquidy batter) 1 cup sour cream (or Greek yogurt from original recipe, but sour cream is cheaper and works great) 1 Tbs Vanilla extract (or imitation vanilla, since that stuff isn't cheap) 2 Tbs granulated low-carb sweetener of choice (I've been using swerve, but I've used stevia, splenda, and sweetn'low in the past with decent results) Dry ingredients: 35 grams of coconut flour (original recipe only uses coconut flour, and 44g) 30-35 grams whole ground flaxseed meal (could probably use psyllium husk, its mostly for that good fiber and to make it more sturdy) 1/2 Tsp + 1/4 Tsp baking soda (I had to add the extra baking soda to offset the extra dry ingredients) Just mix the wet ingredients and sweetener together really well, then mix in your dry ingredients in really well. I use a mini ladle for portions when pouring into my mini waffle maker. To help keep them from going too soggy, its suggested you put the finished waffles on a parchment lined pan in the oven on the lowest setting possible (approx. 150 F). I just put them on a wire rack to cool, and freeze most of them. They heat back up nicely in the toaster oven.

I made the “White Bread” recipe and love it! I slightly modified it. First, I doubled the ingredients to make for chaffles in the “No Mess” Dash griddle. I made the batter in a small food processor, used liquid cage free egg whites from a carton (3/4 cup) and added 1 tbsp of butter. Blended for 20 seconds and batter was slightly runny. However, the chaffles turned out full and fluffy with a slight taste of butter and the batter made six instead of four!

These recipes are so great!!! Thank you so much for sharing, and giving a hint as to taste and texture. Keto ingredients can be really expensive, so knowing what you're getting into ahead of time really helps! Can't tell you how many times Ive made a keto cookie or bread recipes and thought.... omg.... I just can't eat that.... soooooo heavy and dense with a strange texture.

Cannot wait to try a couple of these recipes. I just purchased the new additives. Will you please, please come up with a good pasta recipe? I have tried others and too eggy, puffy etc. I’d love a recipe to use in spatzle, or egg noodle. Thank you in advance.

I made the everything bagel one, just sprinkled the Everything bagel in the finished mixture-used less like you suggested. I don’t have Oat flour so I used Coconut, spread with cream cheese how you suggested! My hubby and I are in love! ❤️❤️❤️

Tried the egg white Chaffle last night for a pork tenderloin sandwich and it was delicious!!! My hubby loved it and he’s not been crazy about the Chaffles so far. Thanks for sharing. Love your videos.

I've been waiting for a chaffle recipe with some real body to it, so I was excited at Aaron Bailey's "Sandwich Bread" recipe. I've been making it every morning and it's just delicious. Love the hefty crunch. (I do add some yeast for flavor as you suggested) Thanks for bringing us these recipes!

Hi Nola, how much yeast do you add? Thank you.

Well I took the dive and got myself all setup for Chaffles. I tried you colaborative recipes for Burger Bun, or chaffle and the best white bread chaffle. This has set me up for a new turn in my keto experience. I followed your recipe to the tee and both were excellent. I now have a bread substitutes and I am sitting here smiling. Thank you for the demonstration and to your keto colleague's for this inovative twist on low carb bread.

I think the first chaffle I will try is the “Best White Bread”. Then I’m gonna serve it with the two lightly fried egg yolks right on top :) Thanks for the test kitchen. You save me hours of thyme.

Dana, and now I’m thinking PB&J, too. 😄 Can you recommend a keto jelly? I’ve not tried any since starting this journey.
@danakarloz58455 жыл бұрын
PortCanon I’m actually going to be making my own low carb jams and jellies but for now I mostly get the cheapest I can find at the grocery store 🙈
@danakarloz58455 жыл бұрын
PortCanon I can give a quick tip! If you like raspberries then use a 1/4 cup in a saucepan with water and sweetener. Cook it down until it’s super soft and then it’ll be jam-like. I’ve used this in my homemade bison bacon bars for that special sweet taste. I bake them in the oven and they’re like meat candy bars 🤓 I never use measurements so I do apologize for not being able to give a definite answer 🙏
@danakarloz58455 жыл бұрын
PortCanon if you like to experiment, I’d suggest that you get sure jell fruit pectin and some type of fruit and make some tasty jam for yourself where you can control the ingredients. I know it has dextrose in it but it’s not something I’d be using every day but only as a special treat.

Made it today - tried pecan sticky bun- very good - apple pie and blueberry After two filled up and freezing the rest for the week. Hits that spot when you want something sweet and a quick prep time. I now have options for breakfast now.

Diana Butler's white bread chaffle (#5 in this video) is wonderful. Can't say enough about it. While my family (non keto people) at Italian beef sandwiches last night, I enjoyed a roast beef sandwich using the white bread recipe. It was outstanding. Eleven weeks with no cheat meals, and this was quite satisfying, and I can't wait to discover new uses for this version. Thank you, Diana, and thank you, Steve, for posting this video. All of your videos are appreciated. Thanks from your neighbor to the south (NW suburbs of Chicago), Debbie

The wonder bread recipe is my "bread" go to, but with egg whites. Sam's club has a 6 pack :) I too use the plunger mixer and a 2 cup Pyrex measuring cup! Thanks Steve! - Linda Craig

Right now I am trying the white-bread chaffle, and I just had to comment. It is so like white bread it's hard to believe it came from a waffle iron. It's a keeper! thank you, Steve, and whoever first conceived this recipe.

I also made it in a Dash griddle, and it makes a respectable (albeit small) hotdog bun.

I find adding 1/4 tsp glucomannan (konjac root powder) to the Diana/Sui white bread chaffle recipe helps it to be just a little more pliable. If it weren't waffle shaped I could genuinely believe I was eating white bread. Delicious!

I tried Diana's version for my first ever chaffle recipe and I'm really glad I did because it will help me ease my way into chaffles and getting used to the taste of the egg. I used the mini dash griddle, and it came out so perfectly Golden just like a pancake

I just got a waffle maker today. I tried the recipe submitted by Diane. I'm not a huge fan of almond flour in savory recipes, so subbed with lupin flour. Pinch of salt, shake of garlic powder. OMG, but these came out AMAZING. Schmeared on some cream cheese while still warm. I will be making these in batches to have throughout the week! Looking forward to trying the others on this list! Thank you!!
