Watching Harry and Joe reminds me of being a liaison officer for British officers touring US bases in the late 90s. 9 states and we are every regional food there was to be had Cajun and Texas BBQ was the favorites

Goldee’s does wrap their brisket, but only for the hold. They cook it until it’s 195ish unwrapped and then use foil for a long hold in their warmers.
