Amazing series of one ingredient dishes, would love to see one with eggplant, or mushrooms. Or maybe Zucchini? Some of my favorite vegetables! :)

Amazing video as always. Just a question, a 0.6% salt brine seems extremely low for a fermentation. Any reason for that low amount of salt?

@@coenoosterhuis2621Following the recipe, it is 0,6% percent which is on the very lower bound of fermentation. 6% is probably too salty to pull this off, curious to know if it is possible.

That’s the whole concept of this series, only work with one ingredient to boost your creativity and discover new things. If I would make this dish without that concept it would definitely look a bit different
