Yes. Plecos are notorious for coming out of water . I used to run a decently large fish department . Sometimes we would come in and larger common plecos would have jumped , they would be dry , and out all night . We always threw them back in and 90% of them would be back to normal within a day. We had large tanks so we housed surrendered plecos , it was very rare we would sell them. So we wouldn’t sell these “experiments” to customers. But almost all of them recovered , even if they were bone dry

I had a customer that had a fire eel by itself in a 240 that was at least 6ft long and two hands tall. And one time I came in and found a big (at least a foot) pleco on the floor all dried up and just threw him back in the tank, he was fine.

I wonder how the logistics of setting up this show even happens. It doesn't seem possible to transport many of these tanks intact so are they scaped onsite? It seems like so much work must go into just the transport and setting up of this convention. It would be awesome to see a behind the scenes of how people get everything they are showing set up.
