The thing about them calling themselves the King of the Dornish, when they are clearly not has real world aspects. The current royal family of Spain still hold the title 'King of Jerusalem' from the days of the Crusader Kingdoms. Despite have lost the lands centuries ago, the European rulers kept the title, and by marriage and trading it between royal houses, it eventually came down to the Spanish Kings. Who still have it as part of their official full titles (perhaps just in case they ever get a chance to press their claim one day . . . )
