I followed this method exactly and the entire bottom of my brisket is like a rock and there is no smoke ring. I’m beginning to think that the pit boss was a bad purchase.

You all are spreading misinformation. After internal temp is 190 start checking for probe tender. Could be 205 or 192

@@DustySticks they use pellet smokers maybe the issue. Seems everyone that uses one is stuck on temp instead of temp and probe tender

@@miked8042 I'm not going to judge someone for using a pellet smoker. I use one and I don't cook strictly to temp. I'll judge them based on the information, or in this case the lack of it, and their on display skill, or again in this case lack of it. The guy looks like he just learned how to hold a knife let alone trim a brisket, the trim after he is done looks extremely rough. The lack of detail or methodology to how they cook their brisket stands out a ton. They gloss over far too much and if someone whose never cooked a brisket was trying to learn from this video I'd imagine they'd feel extremely lost because they make such large jumps during multiple processes and never explain what is happening during the whole cook. They don't explain how important it is to render the fat, what happens when you let the brisket rest, how to even cut a brisket. They skip all that. Their "bend test" is with a quarter inch point slice. They never even explained the direction of the grain and how it differs from point to flat. I think the issue is Walmart clearly hired these guys more for how they present themselves than the actual substance they provide. There is hardly anything of actual substance to take from this video. From the trim, to the cook, to the rest they barely cover any actual detail of how to cook a brisket.

@@DustySticks I probably shouldn't judge pellet grills but big BBQ supplier by my house sells mostly pellet smokers and has classes. They spread misinformation as well and everyone I've seen on pellet smokers seem to run everything by temperature. I use a Weber smokey mountain
