The tagine is cooked with low heat to allow vegetables to sweat and create their own sauce in which they'll cook eventually, a perfect moroccan tagine takes 3+ hours and you don't need to add any water (because of the preceeding statement). It is preffered to have some meat in there, it give the sauce more dept, so when you dip bread into the sauce (created with the sauce of all the other ingredients) you get the whole different tastes combined

I loved this video. It took me back to one of my first times cooking for myself in college. My parents had just left, and I wanted to make myself zucchini pasta with a spiralizer my mom gave me. I'd also never grocery shopped.... So I went to the store and got my stuff and got to spiralizing. Long story long, I bought a cucumber instead of a zucchini, the noodles turned to goop, and the meal was not edible. I was so embarrassed, but reaching out to a friend about my frustration lead to a first date (I still needed to have dinner) that turned into a worthwhile relationship. I liked how you laughed about your mistakes in the comments. It's all of part of the learning process.

it looks like a good job to me. i would personnally prefer to add a bit more mixed spices and salt on the top , smashed garlic and chopped parsley and coriander. also some olive olive. no need for broth. a little bit of water will do as all the veggies will melt and make their own juice. i hope you used only olive oil at the beggining. cheers

I'am moroccan myselfes but was born in the Netherlands. The Tajin is really an amazing way to cook al kind of meals. That can be with fish, meat or even vegetarian. With rice, cooscoos or even potato. And of course don't forget the traditional "Ras el Hanout" which consist of at least twenty of the most important herbs and spices. Through those herbs and spices your mouth will make a journey of all kinds of smells and flavors. If you have never eaten that, I would say go to a Moroccan toko and get the ingredients and cook a delicious Moroccan tagine. Enjoy your meal :)

Hhhh first we don't use cucumber in tagine, but it may taste good 😂 never tried it, btw, the already cut vegetables[ some like carrots, potatoes, scrap bcs they are the ones that takes so much time] can be found in some street markets in some cities (not all of them), it helps a lot.

Never add cocomber in Moroccan Tajine. Cocomber is for Salads. In Moroccan tajine : We add potatoes, tomatoes, onions and more depends if you have meet Tajine or fish Tajine....but enjoy your first Tajine .....😊

mmmm looks delicious but we don't use cucumber in tajine, but sliced fresh cucumber goes perfect as a side dish with tajine. and trust me you don't want a cracked (broken) tajine so avoid to put it directly on fire u shud separate it with a piece of iron and if you want it to taste even better try to cook with olive oil

Not true, though. Vegetable-only tagines are authentically moroccan. However, in weddings and celebrations, the vegetables are always accompanied by meat. If there's anything to improve, it would be the way the vegetables were cut and "organized" in the plate. A better presentation always makes a tagine tastier. A drizzle of olive oil after the Tagine is cooked makes it tastier too! However, he did a great job! Cooking a Tajine is not that easy, you know!

When cooking in the tajine pot you need to put some cold water in the top of the cover/cone.If you have a real tajine pot not a tourist made nonsense. At the top of the lid, you will notice an empty “well” , It’s not put there for decoration, fill it with water when cooking, this will help the steams, aromas and flavors to cool down, condensate when in contact with that water and slide back into the dish. In other words, fill in the top of your tagine lid with water to help develop more flavors.

In fact, 0:45 is called tajine in morocco. we can have many different dishes cooked in it; however, we will say in the end "we had a tajine today". Therefore, tajine isn't actually a name of a dish.

Very nice video 😊 You can find that in some places. Some greengrocers offer to do that for you especially if you’re a regular client. If you’re in a big city you’ll probably come across women selling precut vegetables for tagine and couscous. Processed food though is considered in Morocco as being tasteless, unhealthy. You won’t find a large choice of precooked meals either cause it’s culturally not appreciated.

Hi, I just stumbled upon your videos and i quite enjoy them! But I had to pause the video to tell you that those are cucumbers, not zuchini. Moroccan zuchini has a lighter color (pale green) the dark green one isn't available all year long. Keep up the good work 👍👍👍

I can't eat tagine without potatoes. (I am a faithful consumer of potatoes) but yours seems delicious, except the cucumber you are a good cooker man. 👍
