there's 2 kind of martabak. both of what you saw in their kitchen are martabak. martabak manis is the sweet one, meanwhile the other one is called martabak telur (egg martabak) which is the savory version with chicken/beef, green onion, and special in-house seasonings (in some stall) for the fillings and serve with pickles and vinegary sauce :) both are delicious depend on what side you are (sweet or savory tooth). we indonesian mostly buy this dish to share with family because of its big portion. also if you have a partner and your partner invite you to meet his/her parents (soon-to-be-parents-in-law), martabak is the dish you often bring with (ofc it's not mandatory)😁

Just a little Info here, the pronunciation for Martabak is actually Martabak, you were right the first time. The guy who said Marchabak was actually just trying to mimicked your English Accent (without trying to offend you or anything by the way) for non English speaker the way you said Martabak sounded like Marchabak. But all is good you finally get to taste Martabak Manis.
