Just to clarify, birria is a "consommé" dish originally from the state of Jalisco in Mexico. And it is based on mutton, they include: the meat with broth in which you can make tacos of the meat. dipping the taco in the broth is not mandatory is a fashion. Those are tacos and they do not have cheese in them. The ones that do have cheese are known as "quesadillas" but that is more of a combination of people from Texas and northern Mexico. Since when ppl dip the tacos in the broth… In Mexico we use a spoon for the broth (or soup) It is not a dipping sauce. I am a Mexican born and raised in Mexico City.

They usually use tapatio ramen, if they used a higher quality noodle like nongshim shin noodles it would be 10x better, also you have to eat it fresh, any noodles will expand & get mushy if it sits too long.
