@@cricketknowall I don't think so because Mike has often made it clear he loves his meat. Also the guy was knowledgeable with the ingredients and really gives depth to helping us understand what's in that local dish. Also Mike wouldn't go around telling people who he is so for the guy to know him, the guy's definitely a fan. At least he's not bringing him around 'tourist trap' restaurants and to the 'cool' local places. If it were me I'd be honoured to bring Mike around for a tour. You just sound like a salty vegetarian from the way you commented.

The biggest issue with Indian food is the excessive use of oil and butter. Paneer is pretty much cheese so obviously it's not the best thing to eat everyday. When I cook Indian food at home I barely use any oil and it still tastes really good. My point is that you can't use this video as an example of Indian food.

Unfortunately, when immigrant Chefs bring their native cuisine to other countries, they have to 'water down' the recipes to appeal to a wider audience that isn't comfortable with powerful flavor or spices. Travel does spoil your palate. The same foods at home now seem bland. Make friends with the Chef and staff and you might get something more 'authentic' that they make for themselves...

Yeah, and watch KZbin videos of cooking recepies by native cooks with lots of followers! I watch Indian cookery videos all the time and make my own. There is a large local Indian population so getting authentic ingredients is not a problem. Also go to the restaurant that is filled with people looking for a taste of home. If an indian restaurant is full of Indians etc (or any ethnic cuisine) order what they are having!

Also another factor is ingredients. Both quality and age. Not all ingredients are added/available outside of India. Indian food is also about timing and freshness. Just baked roti out of tava(within 2 min) tastes totally different. All ingredients have to be strictly fresh, no frozen vegetables, frozen preparations. This changes flavor a lot.

When I go for Indian in Australia they always ask you if you want mild, medium or spicy. I always say I want the Indian Medium not the White people medium the wait staff always laugh and look after me. I once had the chef make special butter chicken for me from scratch because that's the way he would make it in India and it was on par with the best I've had in India. I complimented the dish to the owners who added it to the menu as "Delhi style butter chicken" and it's their best seller now. The only reason he offered was that I was having lunch at 4:30 and there was only one other table that was occupied.

You might want to choose your geography of visit before planning a trip. There are on an average 5-10,000 dishes per state and each of them has a world of variation in them. So, for example, if you want to go to southern India, make a flexible plan because if you want to take the experience in, you'll need a lot of time in each state.

Hets Girl Great! The mixing of spices is an art. Retaining the original flavor of something without adding much nay be considered good by some. However, the perfect mixing of spices to create a new, exquisitely balanced, exotic flavor takes a lot of work and the skills needed for this are on a whole another level.

Japan has been my favorite food place Mike Chen visited, but this India trips looks promising. They just know spices like no other country, its there thing is say. And that is not to put any country's food down, there are tons of great dishes out there i love, more then indian food, but when it comes down to spice, Indian food it has a range thats so amazingly wide that makes it unique in there own way. Its so enjoyable!

The Mongols created the Mughal Empire and then Biryani spread throughout the subcontinent. Try to get the facts right. Also Hyderabad is a place where mainly muslims reside so in India def OG biryani is found there. Im sure in pak all over the place you'd find great Biryani as well. In India he money that is supposed to be used for developing the country goes into the corrupt politicians pockets. In Nominal GDP terms India is now the 5th largest economy of around 2.9 trillion dollars and in PPP terms it is third largest in the world with $10 trillion dollars. You won't believe but India has really developing the infrastructure, fastest in the last 8 years. Billions of dollars have been invested to improve Indian railways, Airports, Expressways, Metro trains etc. Education, Health and Sanitation. One can feel the change now. In another 10 years things will be fine. Yes the per capita income is low because of huge population.

So awesome to see you in India. Still huge on my bucket list. It's so hard to find the right ingredients to make good Indian cuisine at home here in the states. California would be a good place to start. Due to Silicon Valley, there are a large number of Indians and as expected Indian restaurants popped up eventually (techies side jobs). They're very close to authentic Indian food so you can try it out there if you want. Next best place would be New Jersey for the same reasons. After that London has many authentic Indian restaurants.

It's definitely one of many SoBo accents. SoBo alone has way too many different types of speakers to pigeonhole them all into one kind of accent. Also, I understand your Marathi sensibilities, but it's called SoBo, not SoMu.

India consists of a large population of vegetarians. Even the non vegetarians especially from the hindu religion have specific days when they eat full vegetarian food due to their religion so India has a whole variety of vegetarian food way more abundant and part of daily life. So being a vegetarian is no big deal in India than it is in other countries.
