Fish Stew Recipe
Ingredients:
2 cans MACKEREL
2 medium ONIONS (chopped)
1 to 2 cups CELERY (chopped)
32 oz. STOCK (chicken or veg---or use ½ stock ½ water
1 can TOMATO PASTE (I use only ¾ can)
2-3 Tbsp LEMON JUICE
2 Tbsp OLIVE OIL
1 Tbsp PARSLEY (chopped, optional)
SALT & PEPPER (to taste)
Optional: add a little heat, fresh HOT PEPPERS to taste or 1 tsp RED PEPPER FLAKES
Drain mackerel, break fish apart, and set aside in a bowl (I remove some of the less attractive bits of skin and bone, but I'm not militant about it). Heat olive oil in a pot and saute onions and celery for 2-3 minutes. If using fresh hot peppers, add in with onion and celery. Add the tomato paste and stock. A full can of tomato paste can be used, but I usually just use ¾ of the can (it all depends on how tomato-ee you like it). Use two cans of stock (32 oz) or just use 1 can stock and 1 can water. Bring pot to a boil and cook for 2 minutes, stirring as needed. Add fish and return pot to boil, then reduce heat to low and simmer for 10 minutes. While simmering, add lemon juice and seasonings. Stir occasionally and add water if needed.
Serve all on its lonesome or over rice or with crackers or bread.
Give this awesome canned mackerel fish stew recipe a try and let me know what you think...and bon appétit!

I've made this recipe at LEAST a gillion times over the years. Mom used to make a mackerel stew, but it had a white base of some kind. Reminded me of potato soup. I found this recipe and wow!!! If they don't have this in heaven, I don't know if I want to go. Its that good, to me. Thanks chef Buck. I don't know what took me so long to comment.

I made this soup last night. Wanted to do something different with mackerel. SUPER EASY!! Very delicious!! I used a few spices along with Old Bay seasoning for seafood which really brought out the flavor. The next time that I make it, I plan to toss in some veggies, just to add a little flare. Absolutely loved it.

I knew mackerel was heart healthy.I walked by some Freddie Kruger size cans of mackerel in the dollar store.They peaked my interest but I didn't know what to do with them.I was scared what I might find in them.Maybe an old license plate or a tire or steering wheel? So you've taken the mystique and fear out of it and I think I'm ready to give it a go. Thanks.

I made this today and it was wonderful. Thank you. Quick tip is to not put the chillis in first thing like he did, the hot oil basically made teargas from my chillis and everyone in the room started choking! Put them in after the onions. I also added garlic and the green and white parts of a couple of spring onions.

I have made this before without chicken broth. I like to add tomatoes and a small amount of diced potato and peas. Your addition of lemon made me wonder what is wrong with me, I have never added it and it would be perfect. You can get mackerel in tomato sauce that is milder flavor, and also take a spoon and scrape off the brown meat at the top of the fish near the bloodline for finicky eaters.. You never know what is going to come out of the can. My mom and brother stayed with me to wait out a hurricane. I chose that moment to introduce them to jack mackerel. The can I opened was stinky even for me. my brother threatened to go outside in the hurricane and walk home. Buy some oyster crackers, they make every soup or stew 10% better just by being in the bowl. you did good Buck-Not many people will do a recipe on something like this. It is easy to make a recipe with 40 dollars worth of ingredients and 5 types of cheese, they should try doing a recipe on a food like jack mackerel that is a top barter item among prison inmates, LOL
@ChefBuckRecipes
@ChefBuckRecipes 9 жыл бұрын
Robb's Homemade Life I'll have to take your word on the prison reference, since I've never been caught. Me and CG have been making this mackerel for years. I made a recipe video of this dish about 4 years ago, but it's not that good, and not HD...I've been wanting to re-shoot it for a while, but I'm usually hungry and just want to eat when I make this stew....it's a definite go-to on a chilly day when I'm feeling lazy...doesn't take much time and once you've chopped up the onion and celery most of the work is done.

Being familiar with tortillas soup--I live in South Texas--I will will add into my bowl avocado slices, chopped cultural or parsley, and a lime wedge. Adding lime wedge adds more acidity and eliminates chance of noticeable seeds. Excellente.

Yes, canned Mackerel can look scary but it's a very frugal fish. I just crush the bones and add in. Love the addition of jalepeno's to your stew -- nice. Thanks. With or without brown rice but I'll bet it would be good with Quinoa too.

My father would always buy mackerel instead of salmon now I know that it is really good in the can. I don't like fresh salmon but I like salmon in the can. Now I will revisit Mackerel in the can. Thank you

@Chef Buck, that looks good. And as you presented it, would stand alone as a great meal. I think I'd add some sauteed smoked or andouille sausage. Just to add another layer of flavor and some nuance. Served on rice, you'd have an American paella of sorts. Thanx for the video.

I made this last night. I did go ahead and throw in a couple small jalapenos and some red pepper flakes. It was great! It far exceeded my expectations especially considering how relatively easy it was to throw together. The hardest part was removing the bones and skin from the fish. Great recipe!

kab4292 yeah...it's crazy easy. I actually made this dish again this week. We've had a guest staying with us, so it's a perfect dish to have on hand sitting in the fridge whenever anyone feels like a quick bite.

Zalia Saelan no doubt! ---I curry up so many dishes! My partner gets a little tired of me turning everything into a curry (I tell her it's better for us...not sure if that's true, but I think it is)

making it at the moment, this is awesome. I didn't have any peppers/paprika at the hand so instead I used some chopped tomatoes, and instead of tomato paste, I used some homemade tomato juice. and added a bit of garlic, dried cherry tomatoes and rosemary. damn, this is tasting awesome. this is going to be my go to fish soup, I will use it as a base for making fish soups in a future, I guess I can use some different and fresh fish, maybe add some potatoes or other vegetables. Thank you very much for this recipe, you are awesome!
