I spend a great deal of time in and around fishing villages in Japan every year. This technique was taught to me by my father in-law about 20 years ago. Great to see others in the US are discovering it as it really does improve the texture of the fish when eaten. Unfortunately, you're not really doing it correctly. First of all... use a stiffer wire. Do this process immediately after pulling the fish from the water. It's OK to club the fish in the head if it's large enough to be uncontrollable while fully conscious. There are several different techniques. None of them require cutting off the head to run the wire down the spine. Most fisherman and fish processors in Japan will first spike the brain. Each fish species has a different entry point.... so, it takes a bit of experience to get that part down. They then either run the wire through the hole in the head created by the spike and along the spinal column, or they make a cut in the tail and run the wire the other direction.
@sparkeyjones62615 жыл бұрын
Sorry if I came across as a know-it-all jerk yesterday. Didn't really mean to sound like that. Been watching your videos since you started posting on KZbin. Really great to see a local guy get as much recognition as you're getting. Hope to see you out there one day. Cheers.
@jackiefitzpatrick29064 жыл бұрын
Yea..most fishermen sticking a wire in a fishes brain ..don't know where their tiny brain is and run wire along outside of spinal column thinking their doing it right but fish suffers. Little taste difference for making fish suffer from amateur surgeons.
@sparkeyjones62614 жыл бұрын
@@jackiefitzpatrick2906 Very true, it does take a lot of practice. And, knowledge of fish anatomy. Different types of fish require slightly different technique.

Matts the Ike Jime technique does make a significant difference if it is done immediately rather than many minutes after the fish is landed. You are correct that it likely does not make a difference when used on small rockfish. I have done it on albacore and I was impressed with the results. I hope you try it again and compare fish of the same species to make the test more informative. Salmon fishing has been very good the past two weeks. I never heard back from you about being a guest on my 25 ft Skipjack FISHTALES for a salmon trip on the Marin coast. I understand you probably get many invitations and only have limited time. Be careful descending those rocky cliffs. We need to keep you around. Nice to see you added some butter to the bacon grease. Cabezone is my favorite ground fish.

Slay and Fillet Fishing i have a video of ikijime on my channel but its different to this
@kiwiguy86126 жыл бұрын
Slay and Fillet Fishing Ike Jimi is actually a method of stabbing the fish in the brain so it dies instantly this reduces the lactic acid in the fish caused by the fish flopping around this would make it sour. another term "stoned" becuase the fish shakes and then just becones paralyzed. Spearfisherman use this technique when shooting fish. It will paralyze the fish almost instantly.

rigor mortis works at the level of the individual muscle cells, myosin contracting and won't release the contracted state due to no new ATP generation. it eventually wears off over hours. decimating the spinal cord doesn't affect this, but what it could do is destroy reflexes (which don't involve the brain, only spinal cord). if the reflex loop between muscle and spinal cord is severed, you might get a more "loose" feeling muscle, which may account for what you're experiencing.

dude you let me relive my rock fishing days in the same stomping grounds! once caught surfperch at Baker Bch..i foolishly threw them in a tidepool to keep them fresh, had to re-catch them by hand. Nothing to cook with but driftwood.. their was a vein of clay in the cliff so i balled each whole gutted unscaled fish in a ball of clay and baked it hard in the fire, then broke them open..the skin stuck and kept the meat clean, basically steamed.. imagine their gut cavities salted and packed with onions, lemon and BUTTER. Also: live-birth surfperch young can be squeezed out and cooked whole as is, no need to gut.

Bled one guy, the other one went in the cooler whole, I didn't even have time to kill it as fishing action picked up. I just gutted both of them 2 hours later on shore and cooked them up at home. Could not taste or see a difference. A Ling I'll bleed but anything under 5 pounds or so perhaps not worthwhile. One thing I still have to investigate next time I catch something- how does rockfish blood actually smell?
