Great! Great... video. Only one mistake. You're not guaranteed to be able to get into the Spinal Cord canal by spiking and entering through the brain. The little wire is so small and so sharp that you can push it through any part of the body. To ensure that you ALWAYS are pushing the wire through the Spinal Cord canal you need to enter through the tail. By popping open the end of the tail you can SEE that you are entering the Spinal Cord canal each and EVERY time. If you want to test it. Do the test several times. Insert the wire into the the brain end, and then cut the fish open and see where the wire is. In many examples you will find that you've missed the Spinal Cord canal and you're just pushing the sharp wire through the meat of the fish. Sure there are times when the wire will find it's way into the canal, but it won't be consistent. Also that super strong spike has a way of piercing and completely destroying the skill, ending any change of finding the opening to the Spinal cord canal because the whole thing was destroyed.

He doesn't say it in this video unfortunately but in another He mentioned the involuntary twitch of the tail and fins as an indicator of actually finding the correct position of the wire, not to detract from your suggestion as well. More methods to add to the tool box I suppose.

This reply is true but also I see on the other fish he is packing in the ice bag, the tails are cut and folded open to suggest that they inserted the wires from those ends. If that’s true it’s funny he didn’t show that (more accurate) method

Cut entire head off just behind gills with 1 motion. Filet and remove entire spine. Bleed in ice brine. You can accomplish that in under 1 minute and no guessing where the brain is. No wire needed because you remove entire spine, which you are going to anyway. Rinse and pack in ice.

I really appreciate this awareness and I very much encourage you to continue spreading this awareness as almost all fish are suffocated to death, how incredibly horrible! And my health is such that I badly need to eat fish and take omegas but I don't because humane Slaughter and appropriate bleeding are uncommon practices. I so very much hope that someday soon this changes for the benefit of the fish and the health of the humans who have a conscience who aren't even eating fish, till someday, hopefully, things change, prompted by more awareness, like what you're doing. Please, please spread awareness, EVERYBODY!

I first heard about this on Let’s Talk Hookup from you guys i’ve always bled my fish out never spiked them we’ve done comparisons with the meat Water bleeding is always better I live in Reno so the first fish I got to do was a rainbow trout didn’t have a spike or Acord so I used my worm threader it worked great by the time we get home our fish is stiff as a board when we got home we shook it side to side and it was loose as can be we’re gonna eat it tomorrow can’t wait to see what it taste like thank you so much

I didn't realize until I started looking at other videos, how many other people "teach" Ike Jime on KZbin but BOTCH their demonstrations. The fins don't even flare up for some of them. Some of them the fish are still gasping. Have a like for doing it correctly.

Make a small cut at the end of the tail, and put the wire thru there plus that help bleed the fish more, always head up.

Filleting before rigid will make the filet shrink up into rigor with no frame to support...makes the meat shrink up and tough...age the fish on the bone a couple days for best flavour.

Most people spike the brain then run the wire before bleeding the fish.

Hello. Why is it necessary to run the wire? I understand that it eliminates any activity, but from the fish's suffering perspective and quality of the meat, what's the effect? Thank you for all this information. I have stated doing this technique here in Portugal. Best regards! :)

In theory it breaks the signal chain from the spinal cord. The hope is that any random neurons that are still firing won’t be able to propagate either up or down the cord, ensuring that none of the muscles activate and use up any remaining nutrients. It’s the difference between somewhat dead and mostly dead. If all processes are completed properly, some have found that fridge-life of the processed fish extends up to a week or two with _noticeably_ better flavour and smell in a/b comparisons. From my understanding there is less of a perceptible flavour difference within 24 hours. So if the plan is to eat it same day, just the brain spike, bleeding, and chilling are required. However, If you plan to consume the fish over the course of a few days, then doing the additional step of damaging the spinal cord would be ideal. ( Been meaning to get out fishing again ever since I started researching this technique but procrastination has struck 7 years in a row, haha )

I think the idea is it prevents the fish from flailing. Flailing, like vigorous exercise, produces lactic acid, which is not good when you eat the fish.

The humane slaughter aspect is great and completely obvious. Bleeding and immediate ice slurry immersion is normal good handling practise. We've been doing this for decades now. I wonder about the wire treatment? This seems like a theoretical difference. Maybe it makes a difference if the flesh is eaten raw? Would be interesting to have a blind control test between two cooked fish, one brain-spiked and the other spiked & wired, whether you could actually taste the difference. I'm about to head out for a fish this afternoon, so I'll test this and see if there's a real-world difference.

@@stoneysdead689 I mean, this process does make a difference. Even just knocking them on the head and bleeding them out is a gamechanger compared to suffocation. And I mean, they're a company. Can't say I blame them for trying to sell something?

I would like to see an in depth video of how to properly do this with a tuna. I hear too many ways to properly kill a tuna for the best quality product and all of them are conflicting points of view. Too many videos of how to catch them and not enough of how to take care of them once they’re at the boat or on deck.

Fantastic tutorial, thank you. Our laws here in Switzerland demand that we first bunk a fish and then bleed him. Would this be a problem, if I do the Ike Jime (except the bleeding) after this mandatory procedure?

Hitting them in the head is essentially doing the same thing as the brain spike. Instant stun so fish doesn’t stress. I’m sure you could skip and do Ike jime or bonk it and then do it. Bleeding is still done through Ike Jime

Oh so after we stab it's brain then next step is to bleed, and after that wire it's spine? Most people I see don't this method wires it's spine and then bleed.

Cut head off, filet, remove entire spine and guts, bleed it in an ice water brine. Pack in ice. Under 1 minute. Its faster and checks all boxes.
