No purple martin houses here, I ought to get them. But sparrows are more aggressive, huh? I suppose if you have enough houses, there won't be enough sparrows to fill them all, then the purple martins may move in? Great question! I dunno though! Hi John! As I was making this, I continually thought of you. I knew you would be familiar with croquetas! As you no doubt know, in Spain they usually make these with bacalao or jamón! The creamy richness in the center, and the crunchy outside are heavenly! You never heard of Béchamel Mucho, huh? LOL. I was acting silly! The low-carb breadcrumbs are indistinguishable from regular ones, and I was glad about that. But even regular breadcrumbs wouldn't have added too many carbs to this dish. Who woulda thunk it? Ms. Lulu and I were both in Puerto Rico at the same restaurant at the same time! 😜 Two ships passing... LOL! So true! Maybe someday soon we can go back there TOGETHER! Thank you so much for checking in and for the good words tocayo! I hope you and yours are doing great down there at The Hacienda!

Hi Brendan! I'm afraid of snapping turtles! LOL! Sometimes they eat the fish while they are hanging over the side of the boat on a stringer. Excellent show, John. Lake K was a bit stingy with its goodies but it still came through with sufficient fish for the croquettes recipe. Amazing coincidence how both you Miss Lulu had the same croquettes in San Juan at the same time! Had to smile when you slipped in the song besame as the name of the sauce. Kiss me sauce? Hahaha The poker chip Spanish salad was simple and very colorful. The croquettes turned out great and got a 5 star endorsement from the celebrity food critic. Alas, once again Miss Lulu is tuned into the girlie secrets network and knew the rest of the story about the anniversary luggage. One thing's for sure, you have a bevy of conflicted friends that aren't enjoying marital bliss LoL. Have a great week and say hello to Jeanne. Your friends in Jefferson City, Don, Brenda and Lorraine
@Juanelo19465 жыл бұрын
Hi Don! Wow, the fishing was incredibly tough this day! After we suffered through all that rain early in the summer, the skies are never cloudy now, and the fish seem to be slumbering in the shade. But the croquettes were a different story. I had read dozens of recipes in the hope of recreating the tasty gems we had in PR. I found one that I could tweak and make low carb. To our delight, it worked! My delusions of a career as a singer of Latin music came to a quick end when Ms. Lulu advised me not to quit my day job. But she loved the croquettes and the salad, so I can't be too upset. I will never understand how she knows the backstory on all my tales. Our friends' apparent marital bliss never seems to reflect reality! 😆 Thank you so much for checking in and for the good words my Jefferson City, MO, friend! Juanelo1946 - haha, I sub to about the same number. I used to travel to Asia a lot and that channel is more authentic and less Americanized which I also love but authentic is lighter, less saucy and fresher. We also add water chestnuts, snow peas and bell peppers. Let me know if you try it. Ciao!

I did finally watch the Kung Pao Chicken video. It looked awesome! I would order it in a restaurant in a heartbeat! However, I'm only an amateur cook and this would be a challenge for me. It has some ingredients that are a bit troublesome to buy, like Sichuan peppercorns, Huatiao wine, chili padi, "young" ginger, and sesame seed oil. And it has sugar and cornflour for which I would have to substitute for because they are high in carbs. So I'll probably pass on it for now... Thanks again for your encouragement and support!!
