I believe those slightly chewy slices are made of flour gluten. It’s called “麵腸/mei chang”. Word to word translation would be wheat noodle intestines. Mei refers to its protein origin and chang refers to its appearance. You can easily find them in those vegan/vegetarian shops.
Man, really bring back childhood memories! The UberEATS bentos, look like the one food hawker sell on the Taichung train station platform back in the 1960’s. Back then, you’re allow to eat on the train. Regarding the last Japanese bento, I’ll rate it so-so (Grandma Japanese). Allen, count yourself lucky, basic take-out Taiwanese/Chinese style bento cost 7-8 USD over here in NYC ( 2-3x more). In Miami, you can’t even find any (winter residence).
Allan, the ingredient in the first bento that you didn’t know is called 麵腸, it’s made with the wheat gluten flour with some oil and salt.

Even I already had the lunch, watching you eat the lunch box makes me hungry again. I love the traditional lunchbox in my hometown night market, that place called night market but it opens from the early morning till mid night. This restaurant is called 夜市快餐, but people in Pingtung always call its nick name 豬頭飯,cause there is a big pig head on its sign. Their pork ribs are cooked by deep fried, the put it into the gravy . Not a crunch type but very delicious. There is not fresh vegetables as side dishes as the traditional lunchbox, but it is very delicious.

Heck, you definitely know more about Taiwan lunch box than we do. We will have to watch every stop you make and take note for our future trip to Taiwan
I have no idea until I get to Taiwan. We plan to have lunch provided at our office and school/child care to attract the best engineering talent with great teaching. We’ll be hiring over time a good size crew.

I'm pretty sure I ate 正忠 at least once or twice a day when I worked in 圓林. I think the CP is high for the heft! The entrees were always hot (fried stuff always mega crunchy), and there were tons of options for the side dishes which usually got swapped out every day! I miss it so much....

Besides the main dish or protein in a bento, one aspect that many consider as important or even more so is the quality of the cooked rice. Rice that is mushy, soggy or undercooked will ruin the whole bento!

4:44 You say 竹竿(bamboo pole) ... should say 筍乾(dried bamboo shoot) .... I think nobody eats bamboo poles 🤔😂😂
Really love this one. 👏 Very real life in Taiwan. The lunchboxes culture plays an import part in the every Taiwanese life. Definitely one of my favorite Alan’s videos.
