I’ll give y’all a little hint with the tacos, do a quick sear on all sides of the meat before throwing it in the pressure cooker. Then dip the tortillas in the sauce that’s in the pressure cooker, heat them up in a pan for a little bit, and then build your taco with it. That’ll be a new form of ecstasy for your taste buds 😂

Here's a Pot Roast recipe I like to use and I imagine you could use it for Racoon. Mississippi Pot Roast Place your meat into the Instant Pot. Fill with water until you're just below the top of the meat. Mix a 1 oz packet of Hidden Valley Ranch Dressing mix and a 1 oz packet of McCormick's Au Jus mix into the water. Place several Pepperoncinis (those Italian pickled peppers you sometimes get with pizza) across the top of the meat. DO NOT ADD SALT. There's more than enough salt in the two packets and adding anymore salt would make it way too salty. Seal the Instant Pot and cook for 15-20 minutes per pound of meat. Allow the Instant Pot to naturally release. For a 3-4 pound pot roast, I'll let it rest for around 30 minutes. Remove the Pepperoncinis and Meat from the Instant Pot and shred. Use the water from the Instant Pot to make gravy. Served with Mashed Potatoes and whatever veggies you want.
