Flapjacks are a delightful treat, with a golden, buttery sweetness that lures you in from the first bite. Imagine biting into a chewy yet slightly crisp edge, where the oats, soaked in a rich blend of melted butter, brown sugar, and golden syrup, form a perfectly textured bite. The sweetness is balanced, not overpowering, leaving you with a warm, comforting sensation as the oats melt in your mouth.
Flapjacks are the perfect blend of indulgence and simplicity-rustic, hearty, and satisfying, with just the right amount of chew to keep you coming back for more. They offer a moment of pure, nostalgic comfort, whether enjoyed with a hot cup of tea or packed into a lunchbox for an energy boost.

Ingredients:
250g instant oats
125g butter
75g brown sugar
75g golden syrup (or honey for a twist)
1 tsp vanilla extract (optional)
Pinch of salt
Preheat your oven to 180°C (350°F) and line an 8-inch square baking tin with parchment paper.
Air fryer 340°F (170°C)
amzn.to/3QRaC3F
Bake 20 mins
NOTE: If you don't have golden syrup, here are several substitutes that work well in most recipes:
1. Honey: Honey is a natural sweetener with a similar consistency to golden syrup. It may add a slightly floral taste.
2. Maple Syrup offers a richer, more distinct flavour and is great for a subtle difference in taste.
3. Corn Syrup: Light corn syrup is the closest in texture, though it lacks the caramel-like flavour of golden syrup.
4. Agave Nectar is a healthier, mild-flavoured option, but it’s a bit sweeter, so you may want to use slightly less.
5. Molasses: For a deeper, richer flavour, though it’s stronger and darker, use sparingly.
6. Brown Sugar Syrup: You can make your own by dissolving brown sugar in water and boiling it until it thickens.
Any of these can replace golden syrup, but remember that the flavour profile might change slightly depending on the substitute.

From my understanding pancakes are cooked on a griddle this is why they are griddle cakes in some places. Flapjacks are cooked in a skillet by fat frying. Some slight differences between flapjacks, corn fritters and hushpuppies but many use the terms interchangeably. There some regeonal differences in the pioneer westward movement.

I first had these 25 years ago to the month, if you can believe it!!! I was in Slough for work and one of my coworkers had made these and brought them to share with us…yowser! First bite and I was hooked!!! (Thankfully, he gave me the recipe the next day!) when I came two weeks later, I made them for my Southern Californian office…just sharing the Brit love!!!

I have not had it in years, but I think the Rogers company here in Canada ( or at least in BC- their family mansion used to be on Granville Street in Vancouver and may still be ) made Golden syrup. My grandma always had some around. I'll have to go look in the grocery store.

In Australia, this is the recipe for Anzac biscuits. Only they're spooned individually into a baking tray and baked as individual biscuits. I had no idea that this is what American call flapjacks.
@BackyardChef
@BackyardChef 4 ай бұрын
Similar ingredients - Anzac biscuits have baking soda (which reacts with the syrup to give the biscuits a light texture) plus a few other different ingredient - so similar. Thank you. Best, Rik

In America, flapjacks are the same as pancakes. It's a regional name, more common in the South. Some areas call them griddlecakes or hoecakes but they're all batter-based pancakes. I've never seen these before and they look lovely.

Omgoodness. Now I know what I have been craving-FLAPJACKS! Just one question Rik. I don’t have instant oats. Can I use ordinary oats. And is there any changes I need to make ? I’m going to make these tomorrow. My son will be so pleased when he comes for lunch! 💕
@BackyardChef
@BackyardChef 4 ай бұрын
Yes. Ordinary oats absorb butter etc more slowly - give them a mix and let stand a few mins before chucking them in the tin. It could be a looser mix - so a quick way to solve that is to give a small amount a blend. Mix in with the rest. You might need up to 5 mins more cooking time. Don't over cook. Thank you. Best, Rik

👍🏻 Thankyou Rik! In South Africa 🇿🇦, we call these Oat Crunchies .. but half the time people add baking soda too, presumably to react with the sugar by making it fizz and go brittle when it cools. But that yields an awful metallic taste which i can't stand. So _thankyou_ for proving that the baking soda is not necessary!! ℹ️ BTW, for us, flapjacks are like thick pancakes, crumpets really
@BackyardChef
@BackyardChef 4 ай бұрын
The baking soda is used in another version of flapjacks in Australia - for their Anzac biscuits - and it has been a common ingredient worldwide to make them lighter and crunchier like a biscuit. However, like you leave out the baking soda. Thank you. Best, Rik

Made them today, but I have a problem when it comes to using them for dessert: custard or homemade cranberry/ginger ice cream? Decisions! BTW, first course is your stuffed potato pancakes (though again in Canada we are more likely to confuse them with pierogis-unleavened dough- and piroschki-bread dough).

Since some folks are living where Golden Syrup isn't sold readily, maybe it would be a good idea to show how to make our own? There are plenty of recipes online but provided you have a sugar thermometer, some unrefined sugar, water and a lemon, you're good.
