It's worth noting that the caffeine dose is going to be pretty aggressive here. Whole coffee beans are 1.5-3% caffeine, so a 3oz bar (the recipe is 33% coffee by weight) is going to be equivalent to about 4-8 cups of coffee. The full recipe as written is 24-48 cups!

Try Scho-Ka-Kola, if it's available wherever you live. It's often called "Autofahrerschokolade" here, driver's chocolate, because...well, kind of obvious. first of all, i have been thinking this for a few years now since i learned about how they process coffee and chocolate. up until a point, coffee and chocolate beans are processed the same way. i always thought you could use chocolate and coffee beans interchangably. so thank you for trying to make a chocolate bar using coffee beans. SECOND OF ALL, dang it, now i really do want one of these chocolate grinding wheels. i saw one last year and really wanted one, but did not have the kitchen space for it. but now you make me want one.

i saw the chocolate was a little melty idk if you already did this. But by tempering the chocolate yo make it shinier have more of a snap and make it melt in your hand less. you can temper by heating the chocolate in a double boiler and putting some on a wax paper letting the wax strip cool and see if it snaps.
@monicanonya
@monicanonya 3 жыл бұрын
Please never put anything hot onto wax paper! Best case scenario, it's cool enough that it doesn't effect the wax. Worst case, you put something just a touch too hot down and you end up with a layer of wax fused to the bottom of whatever you put on it. Just use baker's paper instead

This is a question I've had for a looong time and I'm so glad someone finally did this (and confirmed my suspicions about fat content and needing to add some). I guess the reason why this is not commercially for sale is the high caffeine content - it wouldn't be responsible to sell this off-the-shelf, and there's definitely parents who would see this stuff marketed as 'chocolate made from coffee' and assume it was safe for kids because chocolate is safe for kids... so I guess it would be more of an analog to things like Red Bull and Monster. Hell, one of those brands could make big money selling this in bite-sized bars with individual wrappers, as long as they make it clear that one of said bite-sized bars equals a whole can of red bull. Or multiple, I don't know the exact amount of caffeine that would be in, say, 50 grams of this.

Very cool, would love to taste that stuff! There's that German chocolate product called Scho-Ka-Kola which contains finely ground coffee beans, but only 2.6%. It also contains finely ground cola nut. It was introduced in 1936 and in WW2 was included in nazi pilot rations, therefore also being called "Fliegerschokolade" ('airman chocolate'), not to be confused with "Panzerschokolade" ('tank chocolate') or "Fliegermarzipan" ('airman marzipan'), two nicknames for methamphetamine back then, which nazi soldiers also consumed a lot.

Wasn't just the soldiers juiced up on meth, the citizens were too. The way the German military's doctrine was at the time was to bum rush with fast mobility and then wait for supplies for another bum rush, as a result the level of productivity required to maintain such a supply line skyrocketed like the V2s and the citizens were given the meth to keep production up.

@@__Rodrigo__ looking it up, coconut, avacado, palm, palm kernel, animal, and hydrogenated oils/butters/fats are all solid at room temperature (though structural integrity may vary, and there are probably more not listed). you could probably use one of those as a substitute for cocoa butter, probably palm oil as it's already used in various mass produced "chocolate", or a refined coconut butter if you want to be more healthy (unless you're allergic). i would also be interested in seeing a 'meat chocolate' made from animal fat, i don't think that's ever been tried before, and i kinda want to know how it would taste lol
