Thought I'd note this down for myself if anyone else needs it! :) Shallots - x3 Fermented Black Beans - 1/2 cup Garlic - 1 head Ginger - Thumb size piece Vegetable Oil - 1/4 Cup Dried Chillies (If you want it spicy) Shaoxing Wine - 1/4 Cup Soy Sauce - 1/4 Cup Sugar - 2 Tablespoons Salt - 1 Teaspoon (My own note! :D ) - Store in an airtight container for up to a month, use 2-3 Tablespoons of sauce on anything you cook. This recipe looks so good, I went searching for it after I just ate some Tofu in blackbean sauce leftovers for lunch and thought that I must be able to cook this myself! :) Thanks!

I used vegan Mexican black beans, because of soy allergies in my home, and I used some coconut amino sauce for the soy sauce, a little smokey flavoring sauce and some non alcoholic wine and the other ingredients and my Korean church loved it. They really were confused because they know we are allergic to soy and they saw me eat some with them. I told them, they were surprised, never thought about using any other type of bean for the sauce.

I just made one batch with this recipe. The result blew my mind! I increased the amount of all of the ingredients by 50%. I used red wine, and 30% lacto fermented black beans and 70% ancient Chinese style fermented black beans. It tastes awesome! Thanks a lot for this very delicious recipe.

Most delicious black bean sauce. I didn't have fermented black beans, so used 1/2 canned black beans. I added spicy chili crisp and a tablespoon of Hoisin sauce. Not the same ingredients, but in a pinch, it still did the job. It is delicious! I will be using it on ground pork stir fry for dinner tonight, and then marinating pork western ribs tomorrow. So glad I came across this recipe.

sounds very good :D if have a chance of getting your hands on fermented beans though, give it a try. they have a very delicious deep flavour, and add a richness thats hard to describe. they sell them in all asian stores, you can find them also easy online. look for yang jiang preserved beans. they are actually not black beans, but soy beans that turn black in the fermantation process

I'm gonna use this recipe for rib tips. Marinating rib tips in black bean sauce. Then searing ribs tips on grill and a slight smoking. Then I will cool down ribs 24hrs and the next day sauté with spring onions and black bean sauce with a touch of oyster sauce over some jasmine rice. Well worth the time in preparation.

My mil taught me to rinse the preserved black beans first out of the package, then chop or mash for cooking. It really helps it not be SO SALTY.

I like Dude's suggestion of putting some of the black bean sauce mixed with rice topped by a fried egg. Before he said that, I was thinking of a cross-culture thing - spread some of that sauce over toasted French, Italian or sourdough bread. The thought is making me hungry and I already had dinner. Definitely making this. This is the first time I ate back bean sauce with ramen at a Korean ramen shop and it was absolutely amazing. Initially u was a bit not sure how the black bean sauce would comfortable say I can eat this by the spoon now.

Love this recipe. A little hack for you...Put your head of garlic in a jar and shake shake shake. You will immediately have pure cloves of garlic in seconds.

Thank you so much for this recipe. There is not a single major brand name REDUCED sodium Chinese Black Bean Sauce in any market. I understand that UNREFRIGERATED prepared products use MORE salt to preserve the shelf life. However, Trader Joe's is carrying more and more UNREFRIGERATED prepared foods with reduced sodium. There are also other brands in Asian and non Asian markets that are carrying more reduced sodium products. Thanks once again, you explained things so well also !

Awesome but you missed a dash of toasted sesame oil. Top notch stuff!!! Also I was taught to soak/rinse the beans first to wash away all the salt used to preserve the beans and to get rid of all the "other stuff" in there that is not beans (there is a lot).

Sometimes it’s spelled Shao Shing wine. All Asian markets should have it by the cooking wine, soy, oyster sauces.

Peel the shallots after you cut the ends off and cut lengthwise. Much easier to peel.

I'm pretty sure these are black soy beans used in the recipe, and if you are asking if you can use regular black beans, it is a big no for this. They soy ones are fermented and has a really specific taste Hope it helps even after 7 months

Chunjang is much milder. You can hardly taste the fermented black soybeans in chunjang.
