Happy Birthday beautiful lady. These recipes look fantastic! I use my instant pot always. Your daughter Ella is lovely. She has a wonderful voice and look forward to seeing more of her cooking with you Flo. The chicken wings that I make I use a couple of tablespoons of baking powder for every 4 lbs. to a bag and toss the wings in it. Lay on sheet with a rack in fridge overnight. It draws all that excess water out without drying the wings. Love wings in the air fryer. Wishing you a speedy recovery! Cheers

Carnitas are my favorite! Next to that is a slow roasted pork in red Chile sauce, some call it carne adobado. You are correct that each region of Mexico cooks each classic meal slightly differently. If u would like to learn more Mexican dishes there is these ladies I love to watch, their Utube channel is called Views on the Road. U will love their banter.

Happy Birthday!! I've asked this question to others before but I want your take on it. Does the bay leaf really add that much to the flavor? I see you only using one is why I ask. If it was left out and someone was eating this, would they know it was missing?

I believe the bay leaf adds depth of flavour to the dish. I don’t think you would necessarily miss it if it wasn’t there. I take short cuts all the time. I’ll still make a recipe even if I’m missing an ingredient (of course depending on how reliant the dish is on it… eg I’m not going to make curry if I’m out of curry.)
