I was a young lad in Raritan New Jersey, went to Cavanaughs and had my first and last Flounder Francaise. I had forgotten what the actual dish was called, until this many years later from watching your video. Will try it again. Thank you so much Chef!!!!

I love the new wave from the late 79 early 80's. Did I hear just a bit of "Are 'Friends' Electric?" by Tubeway Army/Gary Newman from the Replicas album? A great job on the flounder francaise.

there are a number of ways to cook francaise, the idea is to brown of in the hot pan quickly, add shallots, white wine, squeeze lemon, add cold butter in the end to thicken the sauce, done.

Just don't use wine Muhammad, there is no substitute for wine, don't use grape juice, just add butter and lemon fresh parsley, skip wine.
