Fluffy Caramelised Almond Vanilla Cake With Custard- Cream Filling | Soft Vanilla Tea Cake Recipe

A very Happy Women's Day to all the incredible women out there! To celebrate all the special women in my life, I made a Caramelized Almond Vanilla Cake in my ‪@MorphyRichardsIndiaSmartIdeas‬ 52 RCSS oven with my favourite woman, my mom.
This cake has an incredible vanilla sponge, a caramel and almond layer on top, and a custard filling in between. You can also bake away to celebrate women's day and #ThankHerYourWay.

Ingredients:
1 + 1/2 cup (180gms) maida
¼tsp (1gm) cinnamon powder
1 + ½ tbsp (27gms) baking powder
¾ cup (150gms) sugar
½ cup (120ml) vegetable oil
1tsp (5ml) vanilla
3 eggs or 3/4 cups curd or yogurt
1/2 cup (120ml) milk
For caramel
½ cup (100gms) granulated sugar
3 tbsp (45ml) water
6 tbsp (75ml) fresh cream (warm)
1 tbsp (14gms) butter
6 tbsp (30gms) flaked almonds
For custard filling
2 cups (400gms) whipped cream
½ cup (120gms) custard

Hi Shivesh, Thank you so much for this recipe. I tried making it today and it was so fluffy and filled with moisture but one thing that didn’t go well was the caramel almond sauce which I had put on top of the cake and put in the oven for a few mins but it didn’t end up like yours, mine was dry but apart from that thank you sm 😌🤩

Thank you for the recipe! I tried the eggless version and it turned out well. I would just like to add that I did not add the milk directly. I first folded the dry ingredients into the bowl with oil, sugar and curd and the batter was very moist. I would suggest that add the milk later only if required. Had I added it earlier my cake would have turned out super moist and soggy. Overall it is a great recipe! Would definitely try it again. Thank you!
