See how I made these delicious fluffy pancakes with mango chutney, toasted coconut and cashew cream, quick easy and so decadent, you won't believe their healthy, but they are!
Recipe:
1/2 cup almond flour
1/2 cup coconut flour
1/4 cup psyllium husk
1 teaspoon baking powder
1 teaspoon blue spirulina
1 tablespoon rum extract
1 can full fat coconut milk
2 cups frozen mangos
optional toppings are toasted coconut, cashew cream or butter and banana slices
makes 6-8 pancakes
Mix all dry ingredients until combined, add extract and milk, mix until combined and set aside. Add mangos to pan over medium heat with 1/4 cup of water and cook for about 10 minutes, while you spoon pancakes into a hot well-seasoned skillet and cook for 2-4 minutes per side or until golden brown. serve with our favorite toppings,
