Hi guys!
This is the third cake request video.
In fact, in the previous video, I have made a really velvety Red Velvet Cake.
But there were so many requests for this cake.
So I got a new one with a variation on my chocolate sponge cake recipe.
It's really soft and it melts in your mouth.
This time, I picked “Red Yeast Rice Powder” for this recipe again.

In my old version Red Velvet Cake recipe, the red color came out beautifully even without red food coloring.
My old recipe • [Eng Sub] 무색소 진짜 벨벳같은 ...
If you don't get Red Yeast Rice Powder,
you should need 15g of cocoa powder, 85g of cake flour, and 6g or more of food coloring.
My fluffy Red Velvet Cake needs 3g of food coloring to get vivid red.
Comparing to the normal Red Velvet Cake recipe, it is a significantly smaller amount.
When you do not add any coloring, you will get a slightly reddish brown cake sheet.
I tested various food colorings for this recipe.
The powdered coloring was good even with a small amount (1g) (ex Deco Relief).
Next, I recommend a gel-type coloring (ex. Wilton).
I tested a lot of water type coloring, the color didn't come out well.
In this video, I added 3g of Wilton's coloring.
You will love this yummy, fluffy, and soft cake. Just perfect.
My son said it was the most delicious cake he has ever eaten.
If you follow the video, you will have a wonderful Red Velvet Cake.

Ingredients
♥︎ Red Velvet Cake sheet (gram/ US cup)
70g (1/2 cup + 2 tsp) cake flour
20g (2 tbsp) red yeast rice powder
10g (1 tbsp + 1tsp ) cocoa powder

[When there is no red rice powder]
85g (1/2 cup+ 2tsp) cake flour
15g (2 tbsp) cocoa powder
6g (3 tsp) or more of red food coloring
--------------------------------------------
45g(3 tbsp) hot heavy cream
2g (1 tsp) instant coffee powder
10g (2 tsp)vanilla extract
2 pinches of salt
3g(1+1/2 tsp) gel-type red food coloring
3 eggs (approx. 160 g)
125g (2/3 cup - 2tsp )sugar
2 egg whites (approx. 70~75g)
70g (1/3 cup) sugar
♥︎ Cream cheese frosting
400g (2cup - 4 tbsp) cream cheese
240g (1 cup) heavy cream
55g (1/4 cup + 2tsp) sugar
♥︎ syrup
60g (3 tbsp) water
15g (1 tbsp + 1/2 tsp) sugar
Mix water and sugar, apply once, boil, and cool completely before use.

그저께 남편 생일이라서 만들었는데... 케이크 시트만들 때 손 많이 가는 만큼 진짜 부드럽고 제가 원하던 식감 그잡채로 나오더라구여.... 진짜 먹고 감탄했어요. 저는 외국 살아서 홍국쌀가루 없어서 박력분 레시피로 만들었어요! 남편이 케이크 회사에 들고갔는데 동료 중에 셰프였던 사람도 케이크 먹고 감탄했대여 케이크 이렇게 부드럽게 만들기 힘든데 잘 만들었다고! 크림은 외국인들 입맛엔 좀 덜 단 것 같더라구요?ㅎㅎㅎ 한국인인 제 입맛엔 딱이었어요!!! 외국인 상대로 만드실 분들은 크림만드실 때 설탕 조금만 더 증량하면 좋을 것 같아여

여러분 망설이지마시고 이거 무조건 만들어 드세요... 레드벨벳은 처음 만드는데 바로 성공했어요ㅠㅠ 남친 생일 케이크로 만들었는데 많이 안달고 너무 맛있었구요...! 촉촉함과 꾸덕함이 같이 존재하는 케이크라 한국인 입맛 저격입니다❤ 그리구 저는 더치 코코아 파우더를 썼는데 너무 색이 진해서인지 색소를 정확히 넣었는데도 영상처럼 새빨갛지는 않더라구용 여러분은 구냥 색 좀 연한 맛있는 코코아 파우더 넣으셔두 될것 같아요ㅋㅋ 여튼 너무너무 좋은 레시피 감사해요💕💕

@@CJH0922 저는 외국에서 거주중이라 알려드려도 도움은 안될것 같은데 대부분 Wilton 색소 많이 쓰시더라구요! 베이킹 용품 파는 곳이면 있을거에요 온라인으로 구매하셔도 되구요^^

Joconde! Thank you so much for this recipe, I have tried to make red velvet cake for years using the traditional method, however, I always came out with brown cake and runny frosting, stumbling across your method was a blessing. At first, seeing you whisk all those eggs I was slightly skeptical, as I have never seen this method before, however, I took the risk and really glad I did! This cake is SO yummy! My sister loves red velvet cake and I am so glad I can create this for her, she really loves this recipe. Thank you Joconde!!! THIS IS BY FAR THE BEST RED VELVET RECIPE I HAVE TRIED(and OH have I tried a few LOL). I HIGHLY RECOMMEND THIS METHOD! I used the recipe that didn't include the Red Yeast Rice Flour and I followed the method in as much detail as I could. 영국 런던에서 많은 감사 인사를 보냅니다.

우선 감사해요 ・ᴗ・ 캐나다 케이크가 너무 맛이 없어서 집에서 만들었는데요. 큰아이 성인되는 생일날 만들어 먹었는데 시트가 저세상 시트예요. 너무 촉촉하고 크림도 달지 않고 맛있어요. 레드벨벳의 최고봉이예요. 70프로 계량하기 힘들어서 1배합 하고 1호틀에 적당량 넣어 굽고 나머지는 머핀틀에 넣어 컵케이크 네개 나왔어요. 1.3~1.5센티 정도 시트 네장으로 케이크 만들었어요.

This recipe is worthy of 10 million views! I’ve followed your recipe religiously and made it about 4 times now and it was a huge success every time. Beautiful colour AND taste. ❤ 😋 I especially love the fact that you haven’t used the ‘original’ recipe for the cream cheese frosting. I just find it too heavy and overpowering - the amount of butter that goes in! Still the thing with any cream cheese frosting is that after a few days in the fridge it starts to harden and go yellow (I’m a slow eater!) So I’ve now learnt to use the frosting recipe from your other red velvet video for the layers in between and for the icing follow the recipe in this video with much much less cream cheese. It basically becomes fresh cream icing with a hint of cream cheese but stays white and fluffy for days! Anyway highly recommend ❤️❤️❤️

Just wondering, did you add any leavening agents baking powder or soda? I followed the recipe to a t and it didn’t rise much (though I don’t think it’s supposed to?) so I was just curious if you made any amendments!

@@PDHatsuneMiku​​⁠​⁠​⁠ hi sorry for the late reply. No didn’t use any raising agent I think the egg ‘meringue’ (well with both yolk and white) creates the fluffiness so you really need to whip it up. Warm it up 6 mins on high + 2 mins on low. Make sure the consistency of the batter is the same as hers or even fluffier especially if you need some time between each step. The moment you stop whipping it starts to flatten. What I do extra is tilt the bowl and then it slowly spin it with my left hand while I’m vigorously whipping away with my right hand so as to let as much air in as possible. This way you can also achieve the same fluffiness about 2 mins faster 😊 and the 2 min slow whip as per the video of course. I did find that the cream cheese frosting failed every time so had to go find a recipe on google instead with more or less the same ingredients.. 😂 but it works! The number of times I’ve made it is creepy and worrying.. but it’s just SOOOOOO yum 😋

와... 시트 진짜 맛있어요... 묵직하지만 텁텁하지 않고 촉촉하면서 밀도감 있는 시트예요!! 레드벨벳케이크 만들 때 말고도 사용하고 싶을 정도예요!!! 매번 감사합니다💜

오늘 만들어봤어요. 정말 말씀하신 것처럼 전혀 새로운 식감의 레드벨벳 시트네요. 시폰케이크같아요. 색은 세바롬색소로 냈는데 조꽁드님거에 비해선 약해서 다음번에 만들면 색소를 더 넣어야할것 같아요. 폭신하고 촉촉한게 부담없는 레드벨벳시트로 좋은것 같아요! 다만 원래 제 계획대로라면 버터크림치즈 아이싱 후에 버터크림 플라워등을 올리려고 했는데 시트가 너무나 가볍고 폭신해서 꽃을 지탱해줄지가 미지수네요 ㅠ. 아무쪼록 이번 레시피도 유용히 잘 쓰겠습니다! 감사해요:)

@@Jocondesbaking Hi, usually they say we should use buttermilk and baking soda in red velvet, but, you haven't used anything like that, what's your explanation on this?? Just a clarification, your cake looks absolutely stunning

@@shruthisp6122 You are to use vinegar, cocoa powder and buttermilk to achieve its slightly tangy/ chocolatey rich taste and it's red maroon colour. In addition to baking soda it makes sure it has a velvety crumb. This recipe is not an authentic red velvet cake.

One time I've tried to make a red velvet cake and I finalised making just dark cake...no red in the batter. Anyway your cake is more beautiful and spectacular than mine 😁 and I absolutely love your kitchen bowls and pots and everything!

조꽁드님 저는이 레드벨벳시트넘 맛있어요 기본제누아즈보다 좀더무겁지만 알던 레드벨벳보다 가볍고 딱좋더라고요 커피향도좋고 이시트기반으로 색소안넣고 초코로한담에 마틸다케이크를만들어도될까요?

Hola! Me encanta esta receta y la hice con arroz rojo.Quiero hacer la tarta de arcoiris y no puedo usar arroz roja. Dime por favor, si necesito usar polvo de hornear? Arroz de levadura roja sirve solo para darle color o también como polvo de hornear?!

안녕하세요! I’m sorry I do not speak Korean but I have made your red velvet genoise many times. It always turns out PERFECT and is my favorite cake! I have a baking question 🙋🏼‍♀️ Why do your cakes sometimes include adding meringue to the cake batter and sometimes just use whole eggs? Under what circumstances should I incorporate meringue into my genoise recipes? When is it best to leave out the meringue? I’ve noticed most genoise recipes do not include meringue

근데 크림치즈가 부드럽게 안 풀리는데 조꽁드님 크림치즈는 차가운데도 부드러워 보여요. 어떤 크림치즈를 써야 하나요? 집엔 앵커크림치즈가 있어요. 너무 단단해서 차가운 상태에서 주걱이 부러질 것 같더라고요 ㅠㅠ

As a Baker myself, I tried this recipe and it is really fluffy and spongy. However it feels like it lack of flavour. I prefer the traditional red velvet cake.

안녕하세용 물어보고 싶은게 있어서 댓글 달아요 😢😢 2호 (18cm짜리) 틀에 계란 3개, 박력분 115g ,초코 가루15g, .설탕 150g, 버터30g, 우유 30그람으로 반죽을 만들어서 넣었는데, 아예 자를수도 없는 크기가 됐어요 .. 레시피 알려주실수 있나요 ㅠㅠㅠ?? 초코 제누와즈 이에요!
