Great cooking lesson. Gravel drives are also good security - you can hear your visitors arriving.

As a life-long professional chef, I can safely say the best food i've eaten has been in family homes. Traditional home-cooked 'ethnic foods' far surpass western restaurant, hotel, & cafe food. Today's young chefs [& young folk in general] cook & eat rubbish store-bought junk food . Your place is an anomaly as it's tasty home-style food in a commercial setting.

My mother worked as a cook for 30+ years and I grew up in that environment. I still love it when you can see steam coming out of that garlic bread. In a previous video, you were giving some of your ashes to the lady who gave you apple wood. Do the farmers only use a little of the ash, so with the excess you put on the driveway?

In high school, I worked at a stone oven pizza restaurant. It was gas fired instead of wood, but the surface was still stone. We had two ovens with 3 bays and a single oven could handle upwards of 20 pizzas. I still pride myself on being able to manage cooking two full ovens on busy Friday and Saturday nights. Had to start out making the pizzas before the promotion to cooking. It was humbling working in the food industry and now that I work a C-suite job, i kind of miss it. I would love to run a food truck or small cafe with my wife. It’s a 10 or 15 year goal to revisit for now, but your channel makes me want to bump that timeline up.

Keeps the mind sharp when you are cooking and making timing calculations in real time constantly. This is why an office environment is so boring because people probably make only a few decisions per shift and the mind is not working at the same pace. When you are cooking under pressure you own your mistakes and successes every minute you work. Make a couple of sizeable mistakes and the boss has no choice but to fire you. Keeps you mentally sharp and more resilient as a person.

Quite a bit of business for a slow day! Love the dedication to your craft. I live in a part of the states that doesn't have much pizza tradition, so I can't help but wish I had a place like this nearby haha.

Great to see the subs rising quickly, God i miss my pizza oven,loved rolling the dough and experimenting, suggest trying a full chook, six hours wrapped well in foil, oh; it will melt in your mouth😊

I sell these at Christmas to the locals as chicken at Christmas is a thing here. I do a 4-hour brine in my recipe and foil wrap for 30 mins then unwrap and finish over the coals in the oven. I can't do it for every customer because it is a lot of work so just a dozen or so people in my village. I don't advertise it because some people may get upset if i tell them No.

I have noticed over the years watching, that the Japanese seem to like calzone a great deal. It appears that you do 50% 50%pizza - calzone. I am most likely biased in my observations but i don’t seem to notice as many people ordering calzone in Melbourne- Is this an accurate observation of the Japanese preference and if so, why do the Japanese like calzone so much? - regards markc

Women eat out in Japan much more than men. The pizzas today were all for kids none for adults. Calzones are easier to eat with your hands is probably as good a reason as any.

How do people find your cafe, the appearance is that you're quite aways off the road, so you must have a lot of signage?

No signs and i don't advertise at all. Just that little sign at the end of the driveway.

Parchment paper in a pizza oven? Is that a special paper that can wistand those crazy temperatures or is this oven not that hot? Normally parchment paper can be used in temperatures up to 250°C and typical pizza oven can easily reach 400°C.

400c is next to the flame it gets cooler the closer to the door. This day i didn't have the oven cranking because i was only do a few items. Pizzas take 2 minutes in my oven on a typical service day.

japanese clearly love flat bread also appreciate you using olive oil, but be aware that olive oil especially from Italy and the mediterrian are known to be fraudulent and may be cut with cheaper oil
