i have never cooked. don't even use a microwave.i cannot tell you how much i admire and envy you. you make it look so easy and ...fun. it is a huge stress point in our house. my husband is very strict on me not cooking but i would so love to learn. thank you for letting me live thru you. its amazing.

You can give it a try but I think parchment or wax paper will tear pretty easily because fondant is such a dense dough to work with. THE MAT is definitely worth the cost and all products at Sweet Wise are 25% off.

Measure your height- likely 4" tall. If so, it's 14+4+4=22inches. I like an extra inch to work with so I have something to grab. Measurements are on the new Pro Mat we sell!

If you are modeling figures, then Trex is good. If you modeling something like flowers, that you want to dry and take their shape more quickly, then corn starch (corn flour) would be the choice. Either way, make sure your hands and fingers are clean of any residue. Sometimes when I work with small details, I get excited about getting to the end and forget to take the time to get residue off from the last step- makes for sticky problems. Clean and dry, clean and dry.

If you HAVE to roll it out on your countertop, try not to use too much dust- instead, just keep moving it after each time you roll so it doesn't stick. If your fondant tends to dry out, knead in a little shortening to help moisten it- that will depend on the brand you are using and how long you take to get the fondant adhered to the cake. Use the method I show on The Mat video, adhering one ink down all the way around, then two inches all the way around, etc. Good luck!

Are you making your own? Likely you can just increase the powdered sugar until you get the right consistency. We find that many decorators prefer to buy Fondx or Satin Ice as a cost effective time saving alternative..

Hi there lovely 😍 informative video. I need a suggestion rather I say help even after adding CMC/Tylose powder though my fondant turns hard but before that with in half an hours time of sculpting it catches moisture and becomes droopy Shiney soft ... I stay in a very humid climate how do I avoid this issue and keep my fondant elements intact in shape for several days ???

lucky joyce I have the same question..I'm also from Philippines.and I learned the hard way that moisture is a very big problem for fondants.I experienced sagging fondant.and the cake was beyond repair.I hope this gets answered soon..

lucky joyce gananche and sprinkle with mix icing sugar with corn flour when you're rolled fondant it will avoid from sticking. if it's too dry just put a bit veg shortening witj your hand before kneading i hope i will help.

People use The Mat all the time for all kinds of dough- pizza, pie dough, cookies, etc. Works great! Try not to cut on it, though, or at least be very gentle. You don't want cut marks on your Mat!

Not a whole lot, but depending on how bad it is, you may be able to very gently rub a little shortening on the surface to smooth the wrinkles. After that, to get the shine off, take a small piece of fondant, kind of shape it like a teardrop, hold by the thin in then flatten the fat end and use to "buff" off the extra shortening.

There are different opinions. My opinion is that it should be about 1/8 inch thick. Others like to roll it thicker so it will hide flaws in the buttercream layer. I think you should get your buttercream smooth and nice first so you can roll it thinner. Makes for a lower food cost and more palatable slice of cake for the guest.

It lacks elasticity, oozes a lot more moisture every time I try to roll it, and it always develops elephants skin. I live in India. Hi. I have added my corn starch to my surface and kneaded my fondant but it is still sticking like crazy and therefore breaking as I try move it. It is homemade. Anything I can do to stop it sticking?

+Dot de Graaf I would never use cornstarch for kneading fondant- it dries it way too much. Also, any that's left underneath it after you transfer it to the cake can ferment, which causes bubbles. It's the perfect storm for fermentation: corn, sugar, dark, moistness. It's like a brewery! Just use powdered sugar. Not sure what your recipe consists of, so it's hard to say why it's soft, but it may need more powdered sugar in the recipe, and it may just need to be wrapped up and rest before using. I recently created homemade marshmallow fondant and when I applied it to the sculptured cake, it became very oily and pockmarked over time. I had to reapply shortening to my hands many times to prevent from sticking (while I was kneading the fondant), do you think that was the reason for the oiliness and holes?

Honestly I prefer a commercial fondant (I use FondX most because it tastes most like MMF), and I don't work with marshmallow fondant a lot. I'm going to guess you had an issue with the mixing, that things weren't fully mixed. Also double check your measurements.

It kind of depends on the brand you are using- some are more friendly to refrigeration than others, some get runny. The 3 brands I stick with are FondX, Satin Ice, and Dream, and they all do really well. If you have any condensation droplets appear on your cake after you remove it from refrigeration, DON'T dab at them to try to dry them. Let them reabsorb. It also helps to store within a box in the fridge to keep the humidity away from it more.
