This is a great tutorial, thanks. Once you’ve made the decoration the way you what, how long does it keep for, and how is best to storage it? (I have to make some character figurines for a cake, and I want to make them as early as possible in case they don’t turn out well). Thanks

let them dry fully in an open space that is not hot or humid. If you store them in sealed boxes and they are not fully dry they can get damaged by their own humidity. If the pieces are big, sometimes a couple of weeks is best so they dry fully. Once dry, you can store them in boxes. You can use soft paper or foam to cushion them in the box. Cardboard is better than tupperwear as it tends to let the air go around the box. Tupperwear works well if you are 100% sure that the piece is dry.

@@Kessiebear81 It really depends on the color you use. Is best to store in a closet that is dry and has no light so the colors won't be affected as much. I have pieces that are still in great condition after many years of being stored.

Would you recommend using tylose powder if you need to make stand up decorations with fondant? Like a crown on a cake for example.... does it roll into string well?

Yes, I do like to add it. If it gets too dry because you added too much tylose, you can add more fondant to soften it.

How do you keep from getting lint and dust in your fondant? I’ve been having trouble with that.

You have to make sure you are working in a clean environment. I used to teach a class in a Michaels and that was an issue. In my house that was never an issue. If you have open windows or dusty air duct, that might not help.

Edna De la Cruz Ok thanks. I do keep my apartment clean, but there is a vent right above where I was making it, so maybe that’s the issue. Someone also suggested using lint free towels and clothes.

@@Rach113 Yeah, the problem is not on you not cleaning your house, but air conditioner vents do collect dust and the spread it everywhere. If you are working near one then that might be why.

I went to a workshop recently and the lady said only wear clothes that are made of cotton when using fondant and only use hand towels and tea towels made of cotton.

Hi Edna, thanks for sharing. Can i cover my cake with fondant and my rose flower is made of buttercream mixture and my cake boarder is also buttercream would that be ok ?

I just missed this but I have done a border in buttercream but keep in mind that some colors might bleed into the fondant if they are dark. It rarely has happened to me but it has happened.

Hi thank you for explaining everything clearly. But I have question I add cmc to fondant and made dinosaurs to my baby when I started it fondant was shiny but when it dried up it became dull .not shiny at all. What should I do

Fondant doesn't stay shiny when it dries. You can spray or paint it with confectioners glaze if you want it shiny.

Hello! I am using a cookie stamp and an embosser stamp to add logo design on some fondant that I am going to place on some candy apples and cakesicles. I have store bought fondant and CMC powder. I did a "dry run" without tylose and my fondant cracked horribly. To get the best design, and not waste product or my time should I just add CMC right at the beginning?

If you are covering a whole cake in fondant, I typically don't add tylose to it unless the fondant is way too soft. Even when that happens, a tiny amount it's all I add. I mostly use the tylose for details or decorations that I might need to use a mold. Too much tylose and yes, it can crack. Works great when using molds or making bows but if you add too much of it to fondant, it can make it really difficult to cover a cake.

Easily for six months but make sure you seal it really well. If you don't I can dry out.

It depends on how much tylose you have added. I If you added a lot, it will dry really hard. If you added less it can last a few days and maybe more depending on the amount.

This honestly will depend on the person. Some people love to use fondant and tylose. Other people like gumpaste. Some will combine gumpaste and fondant and some love using modeling chocolate. I personally like gumpaste but it really depends on the type of figurines you want to do.

I don't really do it unless the fondant is too soft. Don't add too much because it will make the fondant too hard.

CMC is the only other substitute. If you don't have a cake supply store, I would suggest ordering it online.

Thank you. How so you stop it from cracking when drying? I made a solid fondant boat but as it's drying it's cracking. It moulded fine and I was happy with but now the cracks are showing. Please help!

If it is not fully dried then it will crack. If you are doing work like that, allow it to dry for a week at least. If it's too humid in your area, try using gumpaste instead.

Cornflour is not a gum. Some people use CMC but I never tested it.

You can do it at any time but sometimes if you want an intense color, the tylose might lighten it a tad, depending on how much you add. YOu can always add more color if you want.

I am not understanding your question. I am going to guess that you are wondering how much tylose to add to it? But I don't usually add tylose to fondant unless it's really too soft and I need to change the consistency. It's all about what works for you.

That depends on the amount you of fondant. start with a small amount of the MMF and test it. Sometimes, depending on the recipe you use, it can change the texture. Test in a small amount of fondant using small amounts of Tylose to see how it reacts and how you like the feel of it.

what is the difference between gumpaste and a fondant with added tylose? when should you use each one? I'm so confused

Gumpaste is never used for covering a cake. It's mostly used for flowers and certain decorations. Fondant with added tylose can be used for decorations. Some people will use it for making flowers but I personally don't like it. Gumpaste has more elasticity and can be rolled super thin.

It depends on the amount of tylose you added. If you added a lot for a firmer piece of fondant, it will dry hard. You can add more fondant to soften it and store it if you want. Usually, I do smaller portions just in case I have leftover, is not a big loss.

You don't want to do that. a very tiny amount of tylose can help a fondant that is too soft but if you add too much it will make the fondant really hard.

I usually don't but some people do. Just keep in mind that tylose hardens the fondant depending on how much you add to it. So if you add a lot of tylose it will get dry and hard in a matter of days. If you just added a small amount and you want to place it in the fridge, make sure it's super well sealed. Fondant in the fridge hardens a bit so make sure to bring it to room temperature so you can knead it.

@@yae-miko2325 I can't place my cake in the fridge where I live because it's hot and cakes tend to sweat a lot. If you are used to placing your cakes in the fridges with no condensation issues, then the fondant/tylose details should be fine. Some people place the cake in boxes in the fridge to help the cakes not too sweat. I would suggest to do a test and see how it works for you since everyone lives in different environments and I really don't know how a cake will react for you in the area you live. Summers are the hardest on the cake so it's the best time to do this kind of test.

Hello Edna! Thank you so much for your tutorial. I'm studying pastry and bakery on a local school and I'm having a lot of trouble because they want us to use a paste made of powdered sugar, glucose and tragacanth gum powder instead of fondant. And it crackes a lot. A lot. Do you have any advice I could use so it doesn't crack that much? Thank you!!

There are many recipes for fondant. That sounds like a basic recipe. If it's not made properly the fondant will crack. Is it a recipe they have?

@@EiriSaiyuki This is a small batch? Are you wanting to use this to cover a fondant cake? Or is this for gumpaste? My fondant recipe uses gelatin and a lot more sugar. I have both fondant recipes and gumpaste recipes in my website.

I don't personally consider this gumpaste because I like my gumpaste to be of higher quality but this works for many things. Let's say you are doing a colored cake and you need to stay with the same color to do a bow for the cake. It's easier to add tylose to the color fondant you already have from the cake and keep the same color. Also for those times where you are in a hurry and you haven't made gumpaste and you need do some detail for a cake. Sometimes I am doing some detail that is not worth using my gumpaste for and I rather save my gumpaste for something else since this is a fast fix.. I would never use this for flowers but it has it's uses and is worth knowing the information. When you start using it, you l will know if it's of your liking and what would you use it for. Even when you are doing stripes on a cake, a bit of tylose will help get those stripes to stay straight.

Hi mam ...hope u'll be fine.. I have a problem that is when i use fondant toppers on whipped cream then after sometime the fondant starts melting...i dnt use tylose in fondant can i get rid from this problem by using tylose powder??? Help me please

Is best to add toothpicks to fondant toppers so they don't touch the buttercream. Also, is best to place them on the cake last minute to avoid this issue.

I haven't used it but it can be used as a stabilizer. You can't use too much because your mixture will crystallize. I've never used it but some people use G.M.S (Glycerol monostearate) for a smooth texture.

Hi moms out there, i just want to share what i have learned, CMC powder branded as tylose powder is the chemical version of a natural powder called ‘Gum Tragacanth’. And CMC was only used in making medicines. My point is do not use too much tylose powder as our children were the one's who love eating fondant toppers. We do not want them eating those kinds of chemical treats. Suggest that for every 250g of fondant, use 1/4 tsp. of tylose powder only. 🙂

It's used for constipation. I understand that the dosage for a kid is one heaping spoon. I will also add that I am not a Dr. and I also tell my clients not to eat the flowers or hard details on the cake. Thanks for the info!

You need to leave the outside in an open space for the least a week to make sure is fully dry. I tend to do it for 2 weeks because if there is any moisture left, then it can stay soft. Best to leave it to dry in an area where there's not a lot of light so the color doesn't get affected by UV light( away from windows). Once fully dry, you can store it in a box. You can make a bed of even toilet paper or foam and store it in a place that is dry. If there's too much humidity then it can affect the figure.

If you are asking if the Tylose with fondant mix can be used on cakes, yes you can but I use it mostly for decorations since the tylose will make the fondant dry a bit harder.

@@leenarakesh1 It will really depend on so many things. Do you live in a hot environment? Did you leave it to dry in an open space? If it had a weak spot and it was not dry fully it would break. Heat and humidity will not help with this either. I will be honest, I usually don't let my bows dry overnight unless the design requires it.

You can use cornstarch to knead if your fondant is sticky but don't over do it since too much can make your fondant dry.

@@meenalkachwaha4942 Just leave the piece to air dry in an open area. Preferably away from windows. I like to let them dry for a few days but keep in mind that thicker pieces might take longer to dry. Thinner pieces like flowers, take less time to dry. So if you are doing a thicker piece then I will suggest to give it 3 to 5 days to make sure it's fully dry.

@@sonalganatra1552 You have high humidity in India and I don't know if you have rooms with air conditioner there. But when working with fondant or gumpaste it will be really hard to work in a humid environment. Some people learn to deal with the humidity but the pieces might still melt once they are finished. Is best to find a colder environment to work at. Best of luck!

Yes, you need to add small amounts and knead well, too much will make the fondant super hard and that ain't good.
