When the budget is extra tight, my menu becomes homemade soups, stir fries and omelets, made of whatever needs to be used from the fridge or freezer. "Waste not, want nor; make do or do without". Spices can do wonders!

We built our farm from scratch from a dilapidated house on 40 acres of grassland. We grow about 85% of our own food organically. We root cellar, freeze, dehydrate and can. All of our livestock free ranges as much as possible. We are mostly off grid. Anything we don’t grow is either bought locally and/or shipped in bulk. We make tinctures for medicine, make our own soap, flour, corn meal, butter and goat cheeses. While our climate makes a permaculture project like yours very difficult (high western plains in the US) we do plant berry bushes and apple trees. Pandemic? What Pandemic? We live old fashioned and back to the earth deliberately. How to is more important than anything and most of those skills have been lost in a very short period of time. There is NO lack of food. What is lacking is personal initiative. Most people will suffer from food insecurity a. Because of economic insecurity and b. Because no one knows how to feed themselves anymore.

Perfectly stated! It seems that many people under the age of 45 do not know how to grow a garden, make homemade food or even utilize food for medicine. When people talk about food insecurity, I say 'oh the Dust Bowl' effect. Those not from the USA, may want to research the Dust Bowl. It seems history does repeat itself! Hopefully, many people learned about the Dust Bowl, recognize what is happening in the world and making appropriate changes. I have.

Like you, Colette, I like to cook from scratch & being on a low income I like to make big pots of soup & use ingredients like root vegetables, lentils & pulses that go a long way. However, I was horrified to learn from a friend who works in a food bank in Belfast that there are very many families using food banks who are so impoverished they do not even have a cooker and thus have no means to prepare hot meals other than perhaps a microwave and a kettle. This is a whole other level of poverty that is quite scandalous in this day & age. So, so sad. Makes me very grateful for what I have.

A lovely video Colette. I was out shopping today with my youngest daughter Rowanne who's 19. I took her a slow cooker before we left, she works as a carer with extremely vulnerableadults, some with autism and challengingbehaviour. She does very long shifts too. We went to Aldi's and Morrisons. There we were talking about this very subject. As a child she used to help me cook stews, soups, chilli, lasagne, spaghetti bolognese and many other meals. Always from scratch, peeling veg etc. At the time she moaned, as we do. Today she said she was so glad that she knew how to cook. She batch cooks on her days off, prepares meals for a few days, puts some in the fridge and freezes some for later. She said she doesn't see the point of using the oven for a 1 person meal when she can make a few in one go. She was telling me that a number of her colleagues don't know how to cook "real" food. Everything is processed or take away. No wonder kids are so lacking in energy or enthusiasm. They are eating crap so feel crap. Most young people don't even know how to peel a potato! A very sad state of affairs and something that makes me feel sorry for them. I'm glad my children can at least prepare a decent healthy home cooked meal. A priceless skill in this age I believe. We need to get back to real home cooking in order to fully sustain us and make us able to function properly in an age of sadness and hardship for many. Thankyou for sharing your wonderful home with us, the wisdom that you have. You make me feel like there is a chance of something better out there when all around us is doom and gloom. The world is a very sad and scary place right now and people need to hear your practical, thoughtful, sensible words of wisdom. Blessings to you and Jack, and all who find some solace here xXx

I don't know how old this posted video is as I have just recently discovered your channel but these particular mind musings and observations really resonated with me. I am in my early 70's and grew up in a time when there were no supermarkets, the only planes I knew about were the ones in the Biggles books I borrowed from the library and most food either came from the local farmers or was foraged with my parents on a Saturday. ( It was the only day free for my dad and Sunday was definitely a day devoted to the Bible). At many times in my long life I have been very poor; not for us the handouts of the welfare state of today, and it is at these times that I was so grateful that as a child I learnt how to make do and mend as my mother would say. Hedgerows, marshes and fields were places that provided a rich bounty of food and I learnt that going to the local shop or market at close of day was a great way to get stuff that was not going to last till the Monday morning so was often given away. Clothes were home made and snacks non existent. Now as a pensioner on a very small income I am blessed that this upbringing provides me with the knowledge and skills to make sure that can manage on very little.

You We’re right in saying knowledge is key to overcoming poverty. The poor are prone to poor thinking, by no fault of their own. Many have just given up, with no sense of self care at all. This is what we have done to the less fortunate in our society.

Oh, how I agree with you about food Colette. I am often to be heard berating factory made food and those who encourage us to buy it. It IS knowledge of how to prepare fresh food that's lacking. I am the same age as yourself and I can remember being taught how to cook at school. And how to make clothes. Survival skills!

Imagine young children playing in your woods with the fairies and sailing their little boats in the babbling brooks, chasing as they go. And the precious birdies chirping and playing too. I agree with you about the food and fashion industries, which explains them perfectly...'industries'. I have been vego for 25years and have learned to cook wholesome food over the years, however illness has followed me around and when I can't get out of bed I digress to 'industrialised' food. Also with fashion I used to get angry at the fact that I was being told what to wear with current fashions so I learned how to make my own clothes which was interesting at the time because people would be aghast at what I wore😆 Anyway, a beautiful video as always. I love so much going on adventures into your gardens. It is always so much fun and different each time which shows the organic nature of your beautiful natural habitat. Your laugh is infectious. Love the videos and the cooking. My wife and I follow Mcdougall's books, and Michael Greger, and grow our own food. I've just been creating a new vegetable bed - this time a raised one - a small compact hazel coppiced fence, filled with garden organic materials which will be ready in the Spring. I have lots of saved seed to use with it. It's a shame more people don't have this opportunity, but I guess you also have to factor in motivation and time; not everyone has that luxury. For myself, it's exercise, connection with nature, wonderful meals + saving a lot of money - it's win, win, win.

Riches are what you can give. I share produce from my garden with human and creatures, where I can I give what I can and I'm like your gran, I feel rich as I have my bed, a roof over my head, energy (sometimes) to do what I want and food in the cupboard to make nourishing meals. I am rich though not monetary wise or often health. Other than the health I would have it no other way. Take care dear lady.

I love how Jack gets excited every time you pick up a camera, he knows it's walkies time 😁 When it comes to food poverty I believe it has a lot to do with people moving away from the countryside into town and cities where they can't grow their own food. I myself experienced food poverty more than once and because I lived in rented properties I wasn't able to grow food as the landlords didn't want the lawns destroyed. Since most of the money I had were spent on rent and electricity I struggled to buy enough food to eat. I am a very good cook but it's of no use if your cupboards are empty.

I was thinking these very thoughts. Colette is speaking to the health of all, and perhaps low income folks and younger people who may not know how to cook, grow food, basic nutrition , etc. But, when your pockets are actually empty , baking bread, etc. is far more expensive than the crap you might be able to somehow access. True poverty is rising quickly, and in the suburbs and rural areas, it can be invisible. I can not speak to other countries and cultures, but in the US, poverty has been politicized and heavily stigmatized. Many of the newly poor will not apply for what benefits are available. May this situation gracefully resolve with ease. ✨💖✨

@@loiskane4536 there's a poverty stigma in Ireland as well, especially if you're on benefits. You're automatically classed as lazy and sponger by many people, including our politicians - even if you only temporarily need help when you're in between jobs so it's hard to go and ask for help. That's my experience anyway.

Moore Street my mother would bring me shopping there with her, “Mother Moore Feeding the Poor” & yes Mammy always cooked from scratch & when I became a mother I shopped at More Street as I called it & armed with a blender, steamer & fridge freezer such great luxuries Mammy never had I could batch freeze meals & cook from scratch easier & have more time for my child & not be tied to the kitchen 24/7.The best of the old & the new.It is a great back up to have connivance foods when needed, but no one can be substantiated on that alone it’s all about balance.I can make a delicious filling stew for 1.00 a head & a slow cooker is a must for hands free cooking & cheap cuts of meat.Shopping, cooking & budgeting are basic survival skills all girls & boys should learn. Give a man a fish and he eats for a day, teach a man to fish and he eats forever. Learn to garden, even in tubs on a patio, and you’ll have fresh vegetables. Extra can be stored, canned, frozen, or shared with others. I would love to see more community gardens for those who don’t have the space. Home cooked is so much more nutritious than pre-packaged quick food. Love the festive tree and sound of the stream. Blessings.

Oh Colette how you make me laugh sometimes! I couldn’t agree more about how the salsa, especially in the winter months, adds such a nice dash of color and flavor to vegan meals. I’ve been a vegan now for almost a decade and use it near every week. I’m 22 years old and finding every day that almost all of my friends have no idea how to take care of the lack of diveristy in their diets. Like you mentioned, the factory “food” seems like some kind of snake oil business and many people I know have a high reliance on it. I hope to see a large change in this with the shift I’ve been feeling recently. I try to make fresh bread every Sunday and make sure to plan my kitchen garden ahead of time for canning later in the year. As for the diminished individuality in people’s dress, I’ve noticed it a lot in many people here. All I can think of whenever I see the kind of “ubiquitous blight” that’s seeming to take over out source of creativity is how people say “Capitalism breeds innovation.” Ha! I think we can come to agree that anything which stifles the spirit is a source of distress to our inner creative force. Love to see how Samhain has been playing with the life of Bealtaine. As I’m watching this video (more like listening), I’m repotting some Buddelia cuttings I took about two months ago and dreaming of the coming spring. I've pondered on the same ideas. We want everything fast and convenient. The trade off though is our health and well being. Interesting that you brought this up now since most of us in the US with be partaking of Thanksgiving on Thursday. Lots of flopping on the old sofa..😆. Blessings to you and dear Jack.

I also prefer home cooked meals, but when you are a young parent and work full time.... By the time you get in, see to homework, dinner etc.it comes down to fast and easy.

Hiya Colette. I haven't seen your channel for a bit. I'm spending winter here in southern Spain on my own. I love my own company. I was to come back in end October but one of my daughter's lost her job in the Dubai due to the virus and was sleeping in my bed, so I decided to remain here. You really are blessed to have such a wild property with all that nature around you. Even in winter its colourful. That dog of yours understands every word. I was taken with the begining of your video and the food. I could eat that food in summer but in winter I make (like you) one big pot of lentils or beans with all the vegs that I have in the fridge and that lasts me for about 5 days. I got hooked on John McDougall when I went vegan in 2016. His diet made the most sense to me, so I bought his book The Starch Solution and I watched every one of his lectures, then I bought all his other books. Anyone can borrow the book from their public library. So I don't take oils or sugar either. I can sweeten with maple syrup or dates etc. I make everything from scratch except bread and that is my waterloo. I make homemade hummus to spread. When I'm at home I make Kombucha and vinegars and infuse with herbs. I love my food and never tire of eating the same over and over. I have a pressure cooker (Instant Pot) and an Airfryer at home which helps, sometimes I make oil-free chips in it. I was swimming in the sea today, nobody on the beach but me, its got cold and was cloudy, but so refreshing and grounding. Have you done a video on what your thoughts are about this scamdemic and what's to come. I personally don't believe there's anything more than usual going on but that we are being controlled and that the Great Reset is on the way. You will be ok in your cozy cottage but maybe the protesters against the New World Order will come into the woods to escape tyranny. I hope you're safe there. I wish I had somewhere to hide in. I loved this. My Mother taught me how to cook, starting at the age of 4 when I made my own scrambled eggs and I'm happy to say that I can cook anything. I'm a teacher, too, and it always shocks me at how many children in my class have never had the delight of learning how to cook anything. It is becoming a forgotten art, sad to say xox

Hi Colette and Jack hope you are well. Fast food, fast fashion, a lifestyle out of step with the natural rhythm of the world is costing us all dear, environmentally, socially, physically and psychologically. We have become disconnected and dislocated. We need to find our way back to a semblance of balance. We all need to do the work to enable that change and Bealtaine and those who follow you and your work gives me a great deal of hope for the future. Bright blessings to you and the boy Jack. X

Lovely, fun video. I am also cooking. I am cooking for my new puppy and for my family. We have a lot of poverty in my neighborhood. Me mum had 9 siblings and dad had 6. My puppy has kept me busy and I am now lighter and eating a little less. I love home grown and home made food. Thank you for sharing your thoughts.
