As a teacher I am pretty critical about how instruction is presented. This instructional video is well done - too the point, concise, visually pleasing and aurally neutral. I got a new food processor and tried and failed at 5 different crust recipes. This one came out perfectly and was sooo flaky and crisp. I did substitute 4Tbsp ice cold lard for 1/2 stick of the butter as I remember my grandmother saying that makes the flakiest crust. Butter for taste and lard for flakes was what she used to say. Haven't even made the pie yet but I have to say my 4 year old grandson watched your video over and over again and gave me the directions on how to make the crust. We are looking forward to peeling and slicing the apples today to finish the pie! This is my first attempt at a food processor pie crust, will get reviews at Thanksgiving dinner tomorrow night.

I have been trying to make a good crust to make apple jacks with my food processor and nothing would come out perfect, but when I tried this it came out perfect. Thank you so much I started making apple jacks and I needed to have 24 by this week and now I have found the best recipe to use.

Thanks so much for this!! I made my best pie crusts ever, and they were definitely the easiest I've made. And one of them was gluten free. I used a grocery store brand all-purpose gluten-free flour in place of the regular flour for the second crust, and it worked just fine.

Hi Frankie, thanks. I tell ya corn flour, forget it. It breaks down, i went to hell and back with this pie, my first. I even forgot to dump it on the surface before put it in the oven i guess i was tired. I used plain flour in the end but I could not cut those lovely shapes you did in the video, the dough was too sticky. I use this recipie for savory pies & omit the sugar for those, sweet pies i add sugar.Plus i put a teaspoon of lemon juice into the jug then top it up to 2/3rds ice water,helps preserve it a few days too. :)

I recommend having more ice water on hand than you may actually need. how much water it takes can depend on your particular flour. I changed the recipe above to match the video, but just know that the amount of water can vary a little depending on your flour. 2/3 cup of water works well for an all-white flour crust. You might need a little more if there's some whole wheat in the dough.

You can use a tin pie pan, but it doesn't cook the crust as well as a glass pie pan - the bottom tends to be more soggy than flakey. I don't know if corn flour will work because it doesn't have gluten in it to hold the dough together when you roll it out.

I can't recommend using oil if you want a flaky crust, because it's the little chunks of solid butter that make it flaky. I have prepared this same recipe with whole wheat, and it does turn out nice and flaky - you just have to be a little more careful when transfering the dough to the pie pan because whole wheat dough falls apart more easily.

use a glass baking dish, they get hotter.

yes, I always use a glass pie dish to get an evenly cooked crust. the metal ones usually leave the bottom crust undone.

Rita i read some place that if you use a small amount of cheese on the unbaked pie shell first then place apples on top this stops the pastry from getting soggy.I have tried it and it does work! some chef online showed it on a vid but i don't remember who it was.Other than that you can always blind bake the bottom shell.

Freda Weigand A real chicago pizza, they layer thin slices of mozerella on the crust first. It soaks into the crust and keeps the large amount of sauce from making the crust wet. They take the pizza out of the pan at the end and let the crust sit directly on the oven shelf

Tried several other crust recipes. This one has not failed once and it's by far the easiest, most consistent, and tastiest. Used to be I dreaded the suspense, and frequent shortcoming, of the crust. Now I only dislike the tedium of apple peeling and cutting.

It seems like I'm stuck somewhere. I use shortening instead of butter and I keep getting a pudding like consistency in my dough after pulsing. Maybe I'll use the frozen butter next time

yeah, I think the shortening gets too soft in the food processor. you want there to still be little frozen bits of it in the dough when you roll it out. maybe if you freeze the shortening?
