Thanks so much for sharing bologna. Lived in Modena as au pair for two years 28 yes ago and would go to my bosses apt in bologna on the weekends just loved it. The tigella I loved to eat with soft creamy cheese and prosciutto. There cousin's farm next to the house I lived in had a parma ham factory so had lots to eat from there. Enjoy your travels. Enjoyed the Tortellini the Nonna made. My ma came from Alessandria and her thing was ravioli. Well I am originally from South Africa but been living in Seattle USA for 24 yrs

Congratulations on how you described our food. There are some imperfections but you are forgiven because as tourists it is not easy to describe our dishes with precision. As you understand in the lasagna you don't find mozzarella but bechamel. The onion sauce is called friggione. The tigella di pane was used as bread but is actually part of another typical dish of the hills between Bologna and Modena. Imagine taking it hot just cooked and cutting it in half and spreading lard and a spoonful of grated Parmesan and closed like a toast. Or some meats or cheeses. The best with nutella. If you return to Bologna try. Good life and thank you for your love for Bologna.

I'm glad you love Bologna as maybe it doesn't get the press it deserves.. After Rome it's my second favorite city in Italy. I love the culture and the people and last but not least the food. They don't call it "Bologna la grassa" (fat one) for nothing. It's also called "Bologna la dotta" (the learned one) as it had the oldest university in Italy and one of the oldest if not the oldest in the world

OK that's good. Sfoglia is correct. It's made with standars white wheat flour and eggs. If it's grren is because we add spinach. Pasta instead, used in South Italy, is made with durum and water. You have to aunderstand that we have different traditions from South Italy. Bechamel is made with white wheat flour and butter mixed toghether in a pot on fire.

If you ever want a gf, in particular a beautiful woman with a lot of options you need to stop qualifying women so much and be less needy.
