If you like garlic and you've never had toum, you are in for a unbelievable experience. It's one of those foods that I get a craving for and nothing else even comes close. It's so worth the effort, you won't regret it.

Add a couple of pieces of ice to the food processor as you blend your toum for extra-fluffy extra amazing toum, it keeps the temp down while you blend so that it doesn't split during the extra aeration.

Do you think Butternut or acorn squash would go good for another vegan option? I'm guessing it might have to be par cooked first , I don't know . I'm not vegan myself but I do cook for some , I'm not against having good vegetarian meals. I'm looking for some other options because along with my friend being vegan she is also a Celiac and allergic to Dairy, Soy, has some other new restrictions that I have not got to fully learned about yet. She is away with some family stuff for a while so I wanted to come up with some new menu options

To reply to my own comment: the TOUM is in the book, but not the chicken shawarma. I did make it and it is out of this world, but my toum was not thick, it was more like light cream texture. What did I do wrong? Pour oil too fast?

I think I’ve seen FoodWishes do it with a mortar and pestle, but if not that either chop it real fine or smash into a paste w/ a little salt and the side of the knife. Then use a whisk to slowly incorporate the oil. Probably won’t be as fluffy as a food processor but will do the job.
