I was not aware that my house needed it’s own chocolate chip cookie recipe, but I am not opposed to the idea, especially if the house does all of the mixing, baking, and cleanup for me. Goooood house, gooood house!

Cracking an egg into a separate bowl before adding is always a good idea, not just to avoid shells, but also in case you have a bad egg. I once did this (didn't know the egg was off) and had to throw out an entire batch of batter.

My first video by Dorie and I love her! Oh my god, if I weren't already into baking I would be on my way, right now, to get ingredients. And what a great concept I'm hearing for the first time: cookies of the house. I think many of us do that, look for recipes that fit our preferences and to which we then keep returning, but I never actually thought to give this tendency its own name. I feel like I just woke up to smell the morning coffee. I love the cookie she made. Chewy-gooey is so popular and wide-spread while I prefer my cookies crispy. I absolutely have to give these a try and see if I have my new cookies of the house. 🙂

Delightful video and amazing looking cookies!! My dad's house recipe has cinnamon, chocolate chips, and a handful of butterscotch chips. My own addition is browned butter, which really jives with the butterscotch chips. I've also used the base recipe to make molasses oat nutmeg cookies before and WOW they are lovely.

This recipe is basically identical to the one she published in Baking: From My Home to Yours, and it really is an all-star chocolate chip cookie recipe. Only tweak between the two that I can see is her comment in the older book at that you could use up to 1-1/4 teaspoons of salt in the dough “if you really like salt.”

A small public health note: it is usually preferable to run cool water from the tap and heat it separately. Hot water dissolves things more effectively than cold water, and that includes anything that could be present in the plumbing, such as lead. Those contaminants can be absorbed by the fruit while it's softening. That aside, I do love the idea of a spiced apricot ccc. Our current "house" ccc is a dark chocolate and orange situation with some browned butter. The butter being melted lets me skip the creaming step and makes for a delightfully chewy cookie. And using a flavored bar for part of the chocolate (a lindt bar in my case) has a lot of flavor payoff for less than you'd spend on orange extract, candied peel, and almonds. I think flavored bars are a great way to test flavor combinations without committing to ingredients you might not use for anything else.

Thank you. I’ve been wanting to bake cookies as a holiday gift for family but wasn’t sure how soon I can do it. Do I bake and freeze them? If I bake them ahead of time do I have to freeze? If I storing them in tins, how long would they last? Or freeze the batter balls and bake the week of, do you defrost first? I understand to freeze on a tray but do I then store them in a freezer bag, will they stick together? Lol, can you tell I’m new to this? I usually handed out the cookies the day I’ve baked them on Christmas Eve…oh the stress, to much going on. Thank you
@Da-Creams3 жыл бұрын
I usually form the balls and wrap them in plastic individually before chilling in the fridge to save space. Then you can freeze and they should last more than a few months. You can bake them from frozen but it’ll take a little longer, I would leave them out while the oven heats up. I usually defrost in the fridge if I know I’m baking them the next day.
@lorraineedmond59213 жыл бұрын
I freeze the balls for at least a half hour on a sheet pan so they hold their shape, then they go into a freezer bag and into the freezer. Bake them on parchment up to 2-3 months later. They only last that long if I lose track of them. I add 1-2 minutes to the baking time when I bake them from frozen. Such a great thing to have on hand!
