Buttermilk Biscuits
3 cups (360 grams) all-purpose flour
16 grams (1 tablespoon plus 1 teaspoon) baking powder
3/4 teaspoon (3 grams) fine sea salt
8 tablespoons (113 grams) cold unsalted butter, cut into ½-inch/1 cm cubes
1 cup (230 grams) cold buttermilk, plus more as needed
egg wash, as needed for finishing
Green Chile Sausage Gravy
5 tablespoons (70 grams) unsalted butter, divided
1 pound (454 grams) ground breakfast sausage
1 (325 grams) large sweet onion, minced
3 (15 grams) garlic cloves, minced
1 cup (226 grams) chicken or beef broth
1/4 cup (30 grams) all-purpose flour
3 1/2 cups (805 grams) whole milk
12 ounces (340 grams) canned diced green chiles
kosher salt and freshly ground black pepper
1/4 cup (10 grams) finely chopped chives (optional)

I'm so glad I stumbled across your videos. My husband doesn't like homemade biscuits because they're not flaky like the store brand. I'm definitely trying these. Biscuits and gravy is a special treat when our oldest son and grandkids are visiting. Now I can make up the dough ahead of time and be ready to visit. These biscuits would be great with anything saucy. Thanks for sharing.

You two are absolutely adorable! Thank you for sharing your time together in the kitchen. I thoroughly enjoyed watching y’all cook. I have to admit, as a born and bred Southerner, your gravy hurt my heart. Your biscuits looked good, though I’ve never brushed egg wash on a biscuit in my life and can’t name anyone who has since they brown just fine on their own. We use White Lily self rising flour as well as baking powder so they’ll be fluffy. Many of us add lard or shortening when making biscuits for gravy (not butter since we don’t usually have time to keep refrigerating the dough). We brush them with butter after they come out of the oven. When you said biscuits only have a few ingredients, you were correct… but gravy does too. Country sausage grease and/or bacon grease (which we save and keep in a jar in the pantry), flour, milk, salt, pepper, and if you want - crumbled browned country sausage that was cooked in patties before you started making the gravy (so the meat will be tender). If we don’t add sausage to the gravy we tend to add more pepper. Any southern cook worth their salt has a well seasoned iron skillet that probably got passed down from their great-grandmama, and that’s what we usually cook it in. This gravy starts with a roux, then the milk is slowly added and you whisk until it’s slightly thicker than normal gravy. Add salt and pepper to taste, then add sausage at the end and serve (it usually takes around five minutes to make). The women (and some of the men) in my family have made biscuits and gravy that way for many generations here in the Smoky Mountains. With eggs and a side of bacon or country ham, it’s a meal that will stick to your ribs! I’ve just got to say, y’all have a sweet little pup! ❤

The British in me is conflicted with this dish. Biscuits are yummy but that’s not our style of gravy. However I will give it a go. Wish me luck. Update: I couldn’t bring myself to make the gravy so runny. So it turned into a mince sausage dish which was still very nice. The biscuits were good. Next time I will add a dash of sugar for more flavour. They are very similar to a scone but the same. Thanks for the recipe.

I usually do mine with fresh poblano peppers but it's nice to see some veggies in what is usually a stodgy sausage and black pepper only gravy. I think the veggies really make it pop and add a lot of flavor so always glad to see that.
