Wow! What a great video showing us what goes on in the kitchen! The cooking, preparation and cleaning is so important and such perfection! What a professional crew, no one yelling, cursing or losing their mind stressing out. Just one well oiled machine, Everything looks so delicious!!! These employees can be proud of the work they do to prepare meals for their guests.

@@pattyk101 Agreed. Western kitchen could be very polite and courtesy, while the east can be rude and violence. In eastern culture your superior controls over everything, you got to obey as a subordinate, of course no one will show the dark side of the society on KZbin. However, I believe there are decent and mean people in either society.

I guess when I was working in a kitchen I was used to shouting "oven open." so no one would come around a corner and smash into it or turn and bust a knee (because I've had that happen when you're busy, even causing burns down my arm due to not being warned about a salminador being open) or when an order was told, you answered. "so and so heard." so they knew you heard them. or even "order up" it's not that I didn't enjoy this kitchen. it was just so quiet in there except for a few 'ya's' or whatever it was that they said. I also agree with the no cussing, there is no need for cussing in a kitchen, to me it just causes stress and accidents.

Amazing, all the staff including management appear remarkable, you all deserve the highest praise, the food looks fabulous and will haunt me. Now I am an old man living frugally in the Vietnamese countryside and will never get to enjoy a Benjamin steakhouse but I can dream, can't I?

Absolutely fantastic, if I ever visit Japan I will have to eat here. I know there are Benjamin’s in nyc but this one is over the top. They even ensure the staff has lunch and dinner, unheard of.

Nice to see them cooking good steaks rare. Was expecting to see some negative comments about that. Really love the teamwork. That grill master was just that a real master. All business cooking by look and touch, I could imagine him saying keep out of my space to the NY chef that was showing off how to sift flour.

I’ve worked in kittens and front of house on my life. I’ve been a chef for eight hours a week. I’ve been to regular prep cook as well. The attention to detail as usual and beyond in Japan. Love watching this.

I worked in the kitchen of a steakhouse for 10 years. It was nice to remind me of the old days. Clean kitchen. Simple and reliable operation. Teamwork that communicates without loudness. Excellent.

For those of you complaining about the raw steak check the end of the video, perfectly rare. I believe you’re just seeing an intermediate step where they’re pulling the steaks off the grill, cutting them and dousing them in clarified butter before returning them to the broiler to finish off that perfect char. The steaks also continue cooking even as they’re resting so the final product is what you see being served to the customer at the end. But hold the steak sauce please. Just bought five pounds of top sirloin from the butcher. Not dry aged but bandsawed off the primal with the fat cap slightly trimmed as in the video. Just some beautiful chunks of Flinstone sized steaks that I’ve been grilling up. Yum!

Good if that is true... But I'm done ordering medium rare on a steak restaurant because sometime it's rare or plain raw in the middle. I like medium rare, but I prefer ordering medium on steak restaurant because the error is either medium well/medium rare (which is much preferable rather than well done/rare)

As I understand, they partially cook the steaks in the afternoon so that on a busy night, the customers will not have to wait too long for their steaks to get done. At that point the steak is not ready to serve. You can see them searing the meat for the final touch from 34:30 onwards. The way they grill their steaks (and their bacon etc) - they know what they are doing. I've never been there so I'm just guessing.

I honestly don't think that Japanese people are missing out any foods in the US, whatever they decide to cook, they just take it to such good quality, the US could learn alot in general... our food here is such subpar compared to Japan, and yes I've eaten in Japan, I go every year

My youngest daughter (25) has visited Japan 3 times she loves it and is full of admiration for its customs and people steaks look incredible. My favourite is Sirloin with Chips Mushrooms Tomato Onion Rings and Bearnaise Sauce. 🏴🏴

I was surprised at how skillful each person in the kitchen was and how fast they worked. No matter which store they go to, they will be 100% ready to work. Is this simply because it had a top-notch owner? Or maybe it's because all the staff are Japanese. it is really amazing!

This is American food, dude. Japanese culture was not "home of the big steaks." Meats were served cut into pieces so they could eat it with chopsticks. They have their own sauces and sides, but a steakhouse is an American concept.

I love the way he cut that lettuce with one slice. The chef who trained me would always say don't saw through it you'll only bruise the lettuce. Also that sauce looks phenomenal.

I'm really not a fan of Dry age because of so much wastage when it comes to the trimmings, but I'm glad in this case they are going to use the trimmings for burgers after they've cleaned it.
