🛒 Ingredients (4 servings):
🔸 10 artichokes.
🔹 6 mushrooms
🔸 4 slices of serrano ham or prosciuto
🔹 Semicured manchego cheese
🔸 2 lemons
Bechamel sauce:
🔸 250 ml milk (1 cup)
🔹 15 g butter (1 tbsp)
🔸 15 g all-purpose wheat flour (1 tbsp)
🔹 Salt
🔸 50 g fine herb pâté (1.7 oz)
🍳 Directions:
1️⃣ Peel the artichokes (I advise you to wear gloves, as they stain your hands a lot): fill a large bowl half full of water, add the lemon juice and the halves. Tear off the outer leaves with your hands, until you see that the most tender and yellowish part reaches the middle. Cut off half of the stalk, peel it and go over the base removing the toughest parts. Cut off the upper part of the leaves (between ⅓ and half). Cut them in half and (with a small knife), remove the hairs. And put them in the water with lemon so that they oxidize as little as possible.
2️⃣ Put a pot with water to boil and a little salt. Boil the artichokes for 10 minutes, drain and set aside.
3️⃣ In a frying pan, with a little olive oil, over medium heat, brown the artichokes on the inside. Then, place them on a tray.
4️⃣ Wash the mushrooms with a damp cloth. Cut them into slices and then into small cubes. Sauté them in a frying pan with a tablespoon of olive oil over high heat. When they are almost ready, add a little salt. Stuff the artichokes with the mushrooms.
5️⃣ Prepare the béchamel sauce: Put the butter in a saucepan over low heat. When it is melted, add the flour and cook, stirring constantly, for 2 minutes. Pour the hot milk and then the pâté. Continue stirring until it thickens. Add salt to taste.
6️⃣ Put a spoonful of béchamel sauce on each artichoke half. Grate cheese on top and bake au gratin in the oven.
7️⃣ Meanwhile, prepare the crispy ham: place on a flat plate with baking paper or absorbent paper, put 2 slices of ham on top and baking paper over them. Cover with another flat plate. Microwave for 3 minutes at 800 w. Remove the plate and the paper being careful not to burn yourself and place the ham on another plate to cool and finish hardening. Repeat the operation with the other slices. Crumble the ham with your hands and sprinkle it on top of the artichokes when serving.
👌 Note: you can serve them with mashed potatoes. It looks great if you put a bed of it on the plate and then place the artichokes on top.
