I can't understand people sometimes, It takes a lot of effort and organization to put out a video on youtube. These "NEGATIVE NANCYS" need to keep their chatters shot if they don't having anything good to say. Your channel is teaching about the food and culture of T&T, and teaching involves talking. I'm from Trinidad myself but live in the NYC area and I really appreciate videos like yours. I was so delighted to find another refreshing "Trini food channel" where just about everything is authentic . Keep the videos coming, I will continue to watch and even request recipes myself.

My grandmother was a boss cook, she could of make anything, roti, dhalphorie, coconut bake, any soul food, she was old school, when she cook the neighbors would come with their plates by our fence for food. She used a cold pot to make her soul food, was told by her the original coconut bake is better made on a cold pot, because the smoke from the cold pot gives it a special taste. I saw some other coconut bake videos on KZbin but it's not coconut bake. They remove the brown part of the coconut which is a vial part of the coconut for the bake.

Update: since Friday I've made 2 coconut bakes. Ms.Chamion, I've learned many things from you, even though I already knew how to make coconut bake. I tried it your way! First, I used cold butter. Two, I wrapped it in plastic wrap, and three, I used parchment paper to line my tray. Let me tell you the difference and what happened with the cold butter - my dough was fluffier, and by using the plastic wrap like you instructed, I cut it into four pieces when it was done. And as we used each piece we unwrapped it and the others remained tight so it remained fresher longer rather than unwrapping the entire bake each time we needed a piece, and exposing it to the air to dry out. Today is Wednesday, and let me tell you the bake is still soft. It is moist and as fresh as ever. I wrapped it, like you suggested in the plastic wrap and I store it in the microwave and all we have to do on mornings is cut a piece and we just give it a light toast in a toaster oven with a little butter and my husband has been having it with smoked Herring and eggs delicious. The difference with the the parchment paper, the bottom of the bake was not as hard. Ms.Chamion, you are a great teacher, and I am here to learn.

@@FoodByChamionWilliams I asked cuz I couldn't understand the Yeast you using.. I normally use fermipan instant Yeast , is this a different yeast or something ?/ Do i need to activate it like you did or i normally just throw it in my mixture when making bread..

Sean Harrilal hi yes I am a born Trinidadian 🙂

Sean Harrilal ok I got you I use regular yeast not that brand though the only difference is I proofed my yeast meaning I made a mixture with the yeast water & sugar a lot of times when persons don’t proof the yeast for recipes it doesn’t dissolve it stays like little balls so for that purpose I hope that explains things for you

My flour came out a bit hard, is that okay? Should I have added a bit more coconut milk?

Hi from experience once the dough is stiff it gives a preview to the final product when baked…I’m still hoping for the best for you! If you have cling wrap please cover your dough in cling wrap! It’s going to make for faster rising of your dough! Also if you have a microwave(most people choose not to have one) if you have one put it on for one minute after the minute is up put your dough in there to rise/relax last tip when putting your bake in the oven place it on the upper rack & put a baking pan/dish of water beneath it that will help to reduce the bake from becoming to firm/hard during baking I hope all my tips helps! Be sure to let me know how it turns out! Thank you for watching & your comment 🙂
