I remember the late 60's & 70's when I was a boy going to GLOBE cinema in the CROISEE, my first stop was to buy 10 cents kurma and 10 cents pholourie to go see a double feature. It truly was the best of times.

I think with THIS recipe, my kurma can FINALLY come out right! Other illustrations don't explain the importance of keeping the dough cold before frying. Therefore, my pieces come out very soft and limp!

i have been searching high and low for the original tuna puffs pastry with its distinctive taste.. growing up i remember indulging my palette at the PNM constituency with my dear grandmother (may she rip) along with the colorful cheesy cubed sandwiches and the decadent moist tasty beef patties. Made Kumar today. I surprised myself. It came out so very good. I did not put butter in the flour, I put lard. The Kumar did not come out breaking teeth sort of thing, but such a wonderful kind of softness. Really nice!! Everything went so well without a hitch. Good tasting. I have to control myself in the eating. Keep cooking!!
