Back in the days in Guyana rost fish is seasoned and placed directly in the. Firesde with wood.we usually roast a Sweetwater fish called kasi and make fish choka.

I know coal pot cooking gives the food a fantastic taste. But I don’t have one here in NY. Can I put it in oven? But then it won’t be roast fish but bake fish - what do I do?

Love the fish, miss my country home cooking! Don't have a coal pot, would a grill work? Gosh, not the same flavor without the coals.. Trinidad culinary team need to be on the cooking channel for global visibility, just saying! Our food is sooo delicious 😋 Guys, enamel cups are available on Amazon in white and other colors..

Trying to work out how this is ‘roast ‘fish. The fish is twice removed from the heat source. In Barbados I eat roast fish; straight off the boat on to an open fire with nothing added not even salt. Incredible flavor! Wouldn’t this then be steamed fish? Somebody please tell me.

Same exact way, just stick in oven and bake for about 20-25 mins at about 350
