He puts his special twists on seasoning and flavouring the seafood. the food is cooked between layers of banana leaves and is seasoned with salt, seasoning peppers aka pimento peppers, shadon beni / bandania/culantro/recao. The simplicity of his food speaks for its self.

Big up Ducky's and family, I went to school with him, his brother and sisters back in the days. His mom use to come to our rescue when the Mafeking school ran out off water in the tap, she'll stand by a Barrel and give all the kids water to drink, mami Alison nuff love, you guys been awesome from day one. Thanks Natasha. Loved this video and the roast fish looks deeelicious. I would rather have fresh lobster like that with only drawn butter. Too much “stuff” on such awesome meat and especially when it is sooooo fresh. Hold the pepper for sure 😀.

Duckies Orterio organic sea food. I love, love the idea and the food prep looks devine. However, I couldn't understand what was being said . We have to lift our voice, speak slowly and deliberately when we are speaking to an audience. This video is being seen all over the world. Hope you don't mind my comments.
