In Episode 4, we dive into the local cuisine. Armed with fresh, local ingredients from our earlier trip to the Port Vila markets and the guidance of our friends from Pango Village, the cooking process begins - and everyone is involved!
LapLap is a traditional food from Vanuatu, still made with traditional tools and cooked in the traditional way. The dish is a delicious starchy food, almost bread-like in our diet, often served with mains but just as mouth-watering when smothered in home-made coconut milk.
LapLap is made with Manioc, a locally-grown white, fleshy root vegetable - which comes from the market in a plastic-free palm basket. The grated vegetable is then mixed with the homemade coconut to form a paste. The dish is wrapped in banana leaves, tied together with the stalks, and cooked on a fire with the coconut husks and heated stones from the nearby river. The traditional dish is often mixed with island spinach, chicken, or fish, but we love it fresh. LapLap is a beautiful dish, which totally depicts the waste-free, traditional, community lifestyle of Vanuatu. It’s highly nutritious and ridiculously delicious, so come and visit the happiest tropical island in the world and give it a taste!

I am from Kerala which is like the Southernmost State of India,we use Cassava,Coconut Milk(Grated coconuts as well) & Banana Leaves as ingredients for various dishes of our cuisine which are unique to just Kerala...never thought these common ingredients we have in Kerala could combine forces to become this delicious looking LAP LAP !!!

The epitome of a simple wholesome, sustainable life. Plastic free, using nature's wrappings. We have stepped so far from natural living, it's sad. I admire the adventurous spirit of deciding to do this year long island life.

Love your Videos! Have been twice to Vanuatu…. Remember the market etc. I notice that you always ask Hugo what he thinks, likes, what the high light of the day was etc…. But never ask your older boy!?????

best laplap has meats in them and natural oil of the meats goes over the cassave or banana ... I prefer half ripe banana and fish

thats a feast food .... but there are simpler ones ... like a mini laplap .. for oven you can also use hangi pots too cook same or just gas stove ovens ... the idea is steamed

How do they keep insects off the food while they prepare it outside? Here in Alabama, U.S.A., anything we prepare outdoors gets covered in flies and gnats.

Someone with a big leaf waves it over the food until you eat but generally our western ideas of food prep and safety are slightly different. :)

we don't have too many flies ... most of these foods do not attract flies only when its cooked
