I bought a stick blender a few years ago just to make this recipe. It was amazing, but I never made it again until just now because I had some extra bacon and the recipe popped into my head. Wow. Ten times better this time. This is a stunning recipe. Seasoning is crucial (I added a touch of chicken bouillon and parmigiana to the soup) but my god. Heavenly. Thank you Chef John

Chilli afternoon and I had a cauliflower always going to waste in my fridge, so I made this delicious soup and everything somehow made perfect sense! I used half milk half chicken stock so in the end I didn't need to add cream, the taste was fenomenal and I'm glad I didn't add nutmeg, it was better this way. Thanks again chef John! I love soups and I love your channel!

I tried this tonight, but using broccoli instead of cauliflower and chive instead of parsley -my pantry was a little short of some ingredients-. The result was spectacular and delicious. Thank you very much for sharing the great recipe!

cauliflower soup, the first recipe I learnt @ 12 and was blown away that it was creamy without cream. Different preparations change 1 ingredient into different outcomes. Resulted in a lot of experimentation and learning, Always wanted to be a chef and never really went into it bar being a knife hand in a busy kitchen but I've always kept that inner cook well fed with new experiences and information. When you think you have nothing to learn, that's when you've set your own limit to your ability.

I forgot to mention that I made your cream of cauliflower soup and followed your recipe exactly. The result was absolutely delicious! Very easy and very good. I tried this and added a sweet potato instead as well as carrots. It was really delicious. And I used a veggie patty instead of bacon for the Gremolata. Taste just as good. I crisped it up to the point of the crunchiness of bacon. I also added garlic to the topping. So good.

The combination of the soup with the bacon gremolata is perfect. Didn’t have parsley so I put in cilantro and that worked. Thanks CJ another great recipe.

This is such an awesome soup! Great for vegans and veggie's also good for meat eaters with the bacon added :) Fried Russet skin is a great alt for the crunch of the bread/bacon topping. Use olive oil and Silk for dairy subs.
