Curried red lentil soup. Parsnip and pear soup. Mayo Clinic veggie soup: no oil, good for the tummy and the waist line! (Although I imagine that a tablespoon of oil in the 8 cups it makes would be just fine; they're just sticklers!)

I agree. I'm not against meat but I find it heavy and hard to digest so end up naturally avoiding frequently. I love recipes like this because they are easy to fortify by adding for example several tablespoons of collagen/gelatin to significantly increase it's protein and health benefits while not tasting it or changing the consistency. And most importantly remaining a easy recipe.

I made this for dinner last night: it is an amazing soup! I didn't have the fresh herbs on hand, so I used dried Rosemary and dried Thyme instead. I put 3/4 teaspoon of each + a bay leaf. That tasted like a good amount. I think you could go up to 1 teaspoon of each, and it would taste great. Adding the lemon zest, red pepper flakes, and olive oil added greatly to the soup. I would make this soup again. It's easy to make, and I like easier recipes.

I never thought of freezing the herbs in olive oil. Great tip. I just made some cauliflower leek cheddar cheese soup that’s kind of bland. Those last three ingredients should pep it up. Yours looks yummy!

I learned recently Cauliflower stems (and leaves) are totally edible and can be easily incorporated soups (and other dishes). At most may have to peel the outer skin if tough. Sharing because I was happy to learn it myself.

Hi, I made this last night. It is perfection in a bowl! I didn't have yeast powder, so put a little cumin powder instead. Worked well. I only used half a cauliflower just to try the recipe, but will defo use the other half to make it again! And, also tastes good the next day cos often reheated cauli can be bitter. Thank you! I had only stock filled with icky stuff so I substituted the veg stock with a yum miso paste and it worked a treat. So yeah miso paste works! Gave it that depth that I can imagine the stock would have 🙏💗💗

2 years later and this is still my favorite healthy soup. so easy, so delicious, so comforting, incredible recipe. I use an immersion blender and don't bother soaking the cashews and it still always comes out amazing. I use a can of coconut milk if im out of cashews, and sometimes sub white beans for chickpeas if I'm out, still comes out great. I even use dried herbs often and still comes out incredible. I LOVE this recipe in the fall/winter haha, fullproof recipe 10/10. I bought my family members immersion blenders for xmas and printed this recipe out for them lol :D

Yummy! I always roast the cauliflower ( can do in an air fryer too!) which takes this soup over the top. I ofter leave some cauliflower nuggets to "chew on" when having this...

Five stars! I made it tonight. I blended a cup until creamy then added a cup that was not blended to give it some chew. I topped it with French fried onions. DELICIOUS!! 💕💃🏼💕

You should add the yeast only after it is cooked as it kills the benefits of the yeast at such high temps... Love the old herb preservation tip! Will definitely use this. My favorite soup is collard green soup...cubed beef, chorizo, potatoes, collards, northern white beans and onions and select spices...

Spiced squash and broccoli soup: olive oil, onion, garlic, squash, broccoli, cumin, coriander, cayenne pepper, salt, pepper, vegetable stock. Blend smooth when the vegetables are tender. You could make the spicing more complicated but I like the simplicity with these flavours. I do it all by eye and taste, depending on how much of the ingredients I have. I usually garnish with Aleppo pepper.

I am super anti cauliflower, but your recipes never fail me. I will try this (and that “cheese” sauce that includes cauliflower). I have said this to Wil Yeung of Yeung Man Cooking as well, but I appreciate that you both make vegan food so accessible, real, and delicious. I am not vegan, but I have been looking to get more vegetables into my diet since I eat like a picky 5 year old being currently 53 years old.

Wow! You’re pretty amazing. I love your tips on storage, flavors, serving, etc. I’m not sure how I would like the texture of a creamy soup (this creamy), but I’ll try it. Then, I may do half creamy, half chunky! I’ll let you know the results!

You’re too kind! You can definitely thin it out with more vegetable broth or water if you don’t like it as creamy. Another option is to only add one can of beans to the soup and then after blending, you can add in the other can of beans - along with some chopped greens like kale and let that simmer for five minutes. And then you have some different texture!

When I saw this video, I knew I had to make this soup! So I made it today, and OMG this is so delicious 😋 I made this in my Dutch oven and it turned out so creamy. I used my immersion blender which took the most time in preparing this soup. Highly recommend this soup for winter, and don't forget the olive oil, red pepper flakes and the lemon zest. Very hearty and filling.

I finally had a chance to make this soup and it is absolutely delicious! It is totally work making. Thank you! Soup doesn’t need any finishers like the lemon zest, red peppers, Evoo or bread but adds a nice finish. I ended up using my immersion blender instead of transferring everything into the blender. I did add a little bit more of nutritional yeast because why not? It added a little more umami flavor to it.
