I remember the way my grandmother made pancakes, they were more like waffles. She made a single pancake "for me" in a small cast iron skillet. I don't know how many eggs or how much lard she put in it but it was crispy and thick when she served it to me. I poured as much syrup as I cared to upon it and then devoured it with lots of whole milk. I was a skinny kid so my grandmother was very satisfied when I ate the whole thing. I can still remember eating one before school and feeling sooo sluggish for the rest of the morning. Now I make light pancakes for my family on sundays but they just don't deliver the satisfaction my grandmother's pancakes did for me.

I'm loving this series on pancakes. I've added a splash of lemon extract to my pancake batter for years. There's something about the combination of lemon and maple syrup that really is awesome. I can't wait to try this using ricotta

Try adding poppy seeds to the lemon ricotta pancakes. If you like, you can rehydrate them in milk ahead of time for an hour or two, or overnight in the fridge, for even more toothsomeness.

Used to order Dutch Baby or German Pancake at Original Pancake, delicious you could also get the German Pancake with Apples in it, also delicious. Buckwheat pancakes are delicious!

Ah, lovely memories of breakfast with my dad! Thank you for this comment. Every Sunday, after church, the whole family headed to The Original for fancy pancakes. My mom was a wonderful cook, but she deserved a break on Sunday mornings and she definitely looked forward to it!

Started watching this early this morning and decided on fried corn mush with bacon and syrup which wasn't on the list. It beat out crepes as I decided I wasn't in the mood for technique but I did wake up early enough to make the mush, put it in a container, and set in a sink of ice cold water to gel. I haven't had this breakfast in years.

I always add a 1/4c cornmeal to my mix, makes a big difference in flavor. Also sub a 1/4c yogurt for milk makes them rise higher.

I like adding oat flour, or teff flour, to substitute for some of the wheat, plus nut meal (almond, pecan, or hazelnut, or a combination), plus ground flax seed, plus chopped walnuts or blueberries or dried cranberries placed strategically over/within the top as it cooks. Yes, sometimes the whole pantry at once! If using more of the heartier ingredients, I substitute yogurt or buttermilk for some or all of the milk (to add lift). Then pick an interesting honey (lighter or darker or differently fragrant) to compliment the cooked pancake. Yes, this is brunch for a day off!

Ever try the pancake mix from Snoqualmie Falls Lodge and Restaurant just an hour's drive E of Seattle and/or "honey from the sky" on the pancakes or biscuits? Blackberry or Fireweed honey are my all-time favs. Yum!

I used to make a chili relleno casserole the same way, but differently....I would layer sauce, chillis, onions, cheeses, and spices and then pour over a batter of eggs milk and flour evenly in an 8"square pan or 9x13" (depending on portions). Then I served with salsa and sour cream. YUM! Thanks for the memory, I'm going to go get some peppers tomorrow!

I love all your pancakes. And I even love more pancakes. Try your banana pancake using oats instead of flour. It is just to die for and you don't even have to eat them for breakfast. You can put them in your lunch box and have them to snack on on your outing in the park.

Why not whisk the butter into the flour?? Living in Michigan, we make out own syrup, I always keep the darkest of our stock. I heat the syrup until its on the edge of too hot for mouth, haha. I put close to frozen irish butter into the hot syrup, and it becomes a pasty looking butter maple sauce, and it is so so wonderful! I add a layer of it on each cake in the stack.
