Believe me, I watch many video about foreigners try to make Phở - Pho but TJ, he come really close to what we actually made. His variant is a little bit Southerner variant but, he truly done a good job to cook it, not just correct but delicious, and doable at home with easy to get ingredient.

Well, we grill it so the onion & shallot skin and roots is not a big deal, it should burn, someone just cut the root (grill it with open fire is better than what he did is using oven). For the ginger skin, we do keep it. The skin have really strong flavor and when it burn a bit, it smell awesome.

As a Pho expert as i cook it everyday to sell, decent job - 6/10. But consider these tips: 1. Wash bones after blanching. 2. Use less fish sauce as it changes flavour and can be too strong. 3. Add some salt at the beginning instead to keep clear broth colour. 4. Leave half the fat in for more authentic taste and flavour. 5. Add all toasted spices and veg in first and then add the heavy bones on top of it to trap the flavours at the bottom to maximise the flavours. Add all these into your pho cooking, and you will become Photastic! P.S, you pronounce 'Pho' perfectly!

Agree with 1,2 and 4 but not 3 and 5. There is no way you can trap more flavour by just arranging the ingredients in the pot. Any water-soluble compounds will diffuse throughout the container and most fat soluble compounds will float to the top with fat (that's why you need to keep some fat for flavour and I agree strongly). Some flavour-containing compounds are volatile and are lost during the cooking process at the same rate no matter how you arrange your vegetables and bones. The two way you can minimise this loss is to cook it with low heat and add vegetables halfway instead of from the beginning (cook them less). And..., salt doesn't do anything regarding colour. Although technically, salt can coagulate proteins (which are cloudy), I really don't think such low concentration in the broth will make any difference.

as an Asian I'd say there's nothing hard about making Pho, people might find it hard because the ingredients are quite hard to find if you're not living in Asia, but here the ingredients are easy to find (we use those in everyday meal 😊 especially if you're live in Southeast Asia) and dump all of it into a pot it's just takes a lot of time to make it, but it's worth it i love warm comforting food 😚🍜

For a video on how to cook and make pho from scratch, especially to my vietnamese self, this is super duper accurate, awesome and delicious looking. You seriously understand our taste and culinary ways, but yeah, that fat could've been left behind a bit cause it adds a rich flavor behind. But def hit it when you added the basil, beansprouts, hoisin sauce, siracha over chili paste, some jalepeno would've been nice. and key key key, that eye of round meat slice is PERFECT. Regardless, thank you for sharing the dish and presenting the video!

Well done, Thomas. I've watched a lot of Pho recipes on youtube, but yours is the best one. However, without the fat, the broth will not be as tasty. Vietnamese people love that layer of fat in their broth because it brings so much flavor. I'd say take away 50% of it, not all, if you don't like fat :)

God yes. It actually saddens me when I go to a pho restaurant and the broth DOESN'T have a nice beautiful slick of oil on top. It adds such a wonderfully unctuous quality. I'm not even Vietnamese.

Remove the fat, melt it in a pan and add a spoonful back if you want. Pho is all about eating it the way you like.

I don't like the fat in my broth either. Its too greasy and heavy. I prefer a clear and light broth that still has a lot of flavor from the aromatics and the beef flavor from the stock.

That was easily the best Phở-making tutorial ever made by any cook I have even seen. One small tip, I learnt this one from my friend's parents who have a famous Pho restaurant in Hanoi, instead of using rock sugar, try putting in a small sugar cane. It adds natural sweetness to the broth. Anyway, great tutorial! Hats off!!!

Pretty damn authentic. I don't know if I've ever seen my mom use shallots but there are always little variations. Using the wrong Vietnamese cilantro though. There's a different between rau ram and rau ngo gai (or culantro). The "Vietnamese cilantro" you're using is typically eaten in salads (like a mango salad) or with balut and not with pho.

Also we usually use Sriracha. The garlic hot sauce is more often used when you have nuoc cham or a diluted fish sauce eaten with salads or over dry rice noodle dishes.

His way of cooking pho is so authentic! Thank you for representing authentic Vietnamese Cuisine accurately. But for people who thinks this is not authentic, it is because his way of cooking pho is from Southern Vietnam. The ingredients of Southern Pho is partially influenced by Chinese Cuisine. That's why he put rock sugar, ginger, cinnamon into the broth whereas Northern Pho has simpler spices

Very impressed that you did come to Vietnam to "study" Phở. Please add the Hanoi version and I think I have a few tips to share since in Hanoi it's best to have Phở hot on a cold morning or night. 1. The bowl should be hot. 2 The noodle should be hot too and it's normally be dipped in the hot broth (at home, but in hot water in the restaurant :-p) before putting in the bowl. 3. The uncooked meat is normally marinated (in cooking oil, fish sauce, ginger, garlic and lemongrass) before being dipped in the hot broth then transferring to the bowl. 4. As for the herbs & spices try thảo quả (cardamom?) & fresh lemongrass. 5. As for serving in Hanoi we normally use only 3 types of herbs: rau thơm (coriander), rau mùi ta (similar to mint) and scallions (ten-centimeter length including the white bulbs, again dipped in hot broth). 6. Lime normally goes with Phở Gà (Chicken Phở), while vinegar goes with this Beef Phở.

I know this is a bit old....but this is the best Pho recipe I've come across yet. Being stuck at home because of the coronavirus the Wife and I are getting a little stir crazy so we decided to try our hand at Homemade Pho. Had to order all the beef knuckles and meaty bones online since all the meat counters are closed and the wait is killing me!!!

Karina A I think if you have one that allows you complete control of the temperature instead of low, medium, high, that it might work. Otherwise it might not get cool enough, I've had that problem making yogurt.

It was far from what it is like back home since I did not have all the ingredients. I strained the broth but not the fat (we don't do that in Vietnam). He did a good job with this recipe.

I have used a slow cooker and it worked but it's really small. It's better to use a big pot. You can leave the stove on all night if you don't have pets and clear the area of anything loose. I mean, it's just sitting there, not like the fire is going to jump off randomly.

Today I tried making tiramisu and the mascarpone kept curdling every time I tried mixing. I tried every tip on the web I found and everything was room temp. The only thing that seemed to work was adding cream cheese and whipped cream. Please help me find a better way to make a more authentic tiramisu! Thanks so much!!

I find your cooking technique of pho is incredibly pleasant, as i haven’t seen any other foreigner that cook pho that close to the authentic version like this man. I’ve watched other westerners chefs who cook pho and substitute most of the essential ingredients with their available ones, which makes me cringe as those are not pho though. I’m a huge fan of pho. I’ve been told it’s hard to make but to me it looks like it’s just time consuming. I would make it in a crock pot and freeze broth for other times I think that would justify any costly ingredients!

I'd love a pie crust over view. Like the difference between metal and glass pie plates and baking times. Why pre baking the crust is important and types of weights you can use. Also if you use dried goods as a weight can they be used as food still or just as a weight?

i just made this and it was amazing :) very good recipe just a couple notes - i got "marrow bones" from the butcher because they didnt have knuckle and that worked perfectly fine (it is pretty close to the same thing anyway) skimming off the fat when it was warm and leaving just a little worked well too

oh my god...... i was so prepared to criticize..... but you did it justice. you really did. i mean, i'd still love to see a vietnamese face and hear a vietnamese voice. but wow. i'm really proud of this video. thanks for not dulling down the recipe because most white people think it's too challenging. i'm actually about to have a bowl for breakfast since i'm home for the long weekend and mom offered! any criticisms i may have would be to say/write some of the ingredients in vietnamese, so if you go to the market, you know what to look for and what to ask for.

TJ... this was a fantastic and well-done recipe! Very similar to how my mom would do it... just sans fish sauce though. But otherwise, this Viet guy approves! Also, with the fat, you can put it in a little saucepan off on the side, and heat it up with whole white parts of green/spring onions, letting it simmer for a bit to infuse onion flavor into the fat. Then, spoon some of that nước béo hành trần into your phở for a richer, beefier experience because Julia Child once said “fat is flavor”!

You nailed it dude! If you want crystal clear broth though, add a daikon to the mix. It will make the broth somewhat less murky. However, clarity of the broth depends on the bones and meat you use.

You did a very good job! Every region and household has some different takes on Pho. The only thing I'd have done differently is skin off some of the dark "pieces" on the grilled onions and gingers as they cloud/darken the broth. Also, like other mentioned, sometimes you want to add a bit salt instead of too much fish sauce because (1) it has a very strong flavor and (2) it also darken the broth when used excessively. I know some people also add a bit of MSG for the umami flavor. The goal is always to have a clear broth. Some like it with a bit of fat, some don't. But the clear broth is almost always a necessity. Great job though! :)

How curious. In Piedmont we make quite often "bollito" which is boiled meat (only one type or mixed up, the meat ends up eaten with a bunch of sauces) and we use the broth for soups, risotto, etc, but I've never seen all that foam in me pots. Can it be because our local cow, Piemontese, is a quite lean one?
