This time my friend and I went out to Bodega Bay to dig for clams. We ate the clam raw and made clam chowder.

For digging cockles, steamers, little neck clams, etc I use a short handled Dutch Hoe with blunted prongs. I used to dig them commercially. For the horse clams & geoducks a shovel is better. A clam gun is mostly used for razor clams.

That pier behind you used to be a private fish processing pier. The fishing boats would off load their catch. "Joe" would cut their heads off and drop them through a hole into the bay under the pier. Like I said, it was a private pier but Joe liked my Grandmother so we would go crabbing and fishing. We just had to be quiet and stay out of the way. That pier was my favorite place on the planet. I was in my RV at Porto Bodega Marina from 7/3/19 to 7/7/19. Too bad I didn't see you. I had salmon, rockfish, and oysters to combine with your clams. Next time brudda...

The horseneck clams are sweeter than a geoduck but not as firm in texture. Dunking them in boiling water it should take no more than 10-15 seconds to peel their skin. You should immediately dunk in ice water to prevent it from cooking or the meat will get tough. You have some mixed Washington clams in with your cockles. Washington clams have a daily limit of 10 so be careful not to count them as towards your limit of 50 cockles if you Perdue this hobby. The fines are roughly $175 for each clam over your limit. On the Washington clams because they are so slimy I use lemon juice when cleaning to get them to secrete all the slime out before cooking. Good luck and have fun clamming. In my avatar is me holding 2 geoduck with my son caught from tomales bay not to far away.
@OutdoorChefLife
@OutdoorChefLife 6 жыл бұрын
Yeah I noticed all the slime in the Washington clam. Thats a cool trick, I'll give it a try next time. So you take the meat out first and then squeeze lemon on it? or before taking the meat out? Thanks for tips, really appreciate it!
@tamalpias
@tamalpias 6 жыл бұрын
Outdoor Chef Life after you separate them from the shell squeeze in lemon juice and some salt and let it sit for 15-30 minutes. Afterwards you can scrape away the slime layer off their siphon. The siphon is super chewy if overlooked. My favorite way to enjoy the Washington clams are in chowder or battered and fried. The belly section (minus the gut content) is super flavorful.

I was in Mitsuwa Marketplace and just settling in to eat a nice big bento, and somehow I managed to get wasabi in my EYE. My good eye too! In all these years of eating Japanese food or as we call it back home in Hawaii, "Food", I'd never managed to do that. I ended up rinsing my eye out at the table there with a Boss canned coffee. Not a good scene. From now on it's Ito-En unsweetened green tea 'cos you never know, you might be washing your face with the stuff.
